Apple Cinnamon Bagels



Since I’ve started developing my skills in the kitchen, one of the things that I enjoy cooking up the most are bagels.  Just like many of the things that I enjoy creating most – bowls of oats and shakes, bagels are also incredibly versatile.  You can have savoury, sweet, hearty, grainy, and many more varieties.  I recently stumbled upon a blog that I have very much been enjoying reading ­­­­­­my little celebration.

When I first started baking and would browse bagel recipes to try and replicate, a lot of them were incredibly intimidating as well as overall just time consuming.  When I bake, I don’t want to spend five million hours waiting for something to sit and rise (even though I did once make a bread that took eighteen hours to set), I would much rather make my product, let it sit for an hour, then bake for another 45 minutes or so, and have them in a nick of time.

These bagels were in my league, there was no sponge to be prepared, and even though I had to do a little bit of work with making the “apple pie” filling these were a cinch to throw together.  Seeing this recipe, I would have been a fool not to attempt them.  When I first looked at them, I thought to myself that they looked far too glutinous to make, because I knew I would end up eating the whole batch to myself but when it comes down to it, I work out, and I work out hard, I deserve to treat myself once in a while, and so I did.
When I first got into the kitchen and got all the ingredients for the first part of the recipe – the apple filling, I couldn’t wait, I knew the smell awaiting me was going to be one of my all time favourites.  Well, I was certainly right.  It had been a long time since I created something as sinful as this – I usually omit butter and replace it with either avocado oil, applesauce or a mashed banana, but this recipe, I was very reluctant in doing so and wanted to go all out, so I did just that.

The results of this bagel?  I can’t even begin to tell you.  Well, I guess I can begin, because I’m going to, but, they leave me almost speechless.  As I’ve mentioned on numerous accounts I am not a fan of pie, not at all, but give me the filling that accompanies it and it’s almost certain to be a hit – I mean how could it not when I’m a fruit fiend?  Apple pie is one pie I wish I enjoyed, I looooove the filling, but I just cannot get over the flaky crust that accompanies pies – gross.  So when I find a recipe for an almost-like apple pie in bagel form your darn right I’m going to attempt the recipe.

These were incredibly great, especially if you’re not a pie advocate but thoroughly enjoy the flavours that come with it.  These bagels made the house smell like a fresh October day.  I knew by the first few aromas that my nose got a hint of that these would certainly be a hit.  I made a smaller batch since I didn’t want to have too many to eat myself, but I quickly shot myself in the foot for that, since you can always freeze bagels, I wish I had, but it’s probably a better thing that I didn't. 

If you have never made bagels before and want to try some out for the first time, I would certainly suggest making these.  The process is super easy, the result is fantastic, and they look incredibly beautiful.  They are sweet, but overly sweet, there are gorgeous hints of cinnamon and brown sugar with speckles of apple in almost every bite.  It was very much a replica of apple pie via bagel, yum!

Ingredients:
  • 2 cups warm water, about 110 degrees F
  • 2 (1/4-ounce) packets active dry yeast
  • 3 tbsp granulated sugar, plus 1 tbsp
  • 4 to 5 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp salt
  • 1 tbsp Earth Balance or butter
  • 3 small-medium granny smith apples, cored, peeled and diced
  • 2 tsp cinnamon
  • 1/4 cup + 3 tbsp sugar

Streusel Topping - 
  • 1 tbsp butter
  • 3 tbsp sugar
  • 2 tbsp brown sugar
  • 2-3 tbsp flour
  • 2 tbsp rolled oats
  • 1 tsp cinnamon
Directions:
Add 1 tbsp of butter to a large skillet over medium heat, and then add the apples,  2 tsp. cinnamon, 2 tbsp sugar and stir. Cover and let cook for 10 minutes, stirring occasionally until the apples are soft and carmelized. Add more sugar and cinnamon if needed. Set aside to cool.

Combine the water, yeast, and 3 tablespoons of the sugar in a large bowl. Stir and let stand until foamy, about 5 minutes. Add 1 cup of whole wheat flour, the apple mixture, salt and 1/4 cup sugar and stir. Then gradually add 3 cups of AP flour and mix until the mixture comes together.
Add 1 to 1 1/2 cups additional AP flour 1/2 cup at a time, either stirring with the wooden spoon or working with your hands. Turn out onto a lightly floured surface and knead until smooth and no longer sticky adding flour as needed, about 10 minutes.
Grease a large bowl and place the dough in the bowl, turning to coat. Cover and let rise in a warm, draft-free spot until almost doubled, about 1 hour.
Remove from the bowl and punch down the dough. Divide into 12 equal pieces, about 2 to 3 ounces each. Loosely form each piece of dough into a ball and then poke a small hole in the middle of the ball with your middle and ring fingers from the underside. Repeat with the remaining dough. Place on a lightly greased surface [like a baking sheet or counter], cover with a clean cloth, and let rest until risen but not doubled in a draft-free spot, 20 to 30 minutes.
Preheat the oven to 400 degrees F and grease a baking sheet. Prepare streusel topping by mixing all ingredients together in a small bowl with fingers or a fork. If the mixture is too wet, add more flour. If it’s too dry, add more butter.
In a large, heavy pot, bring 12 cups of water and the remaining 1 tablespoon of sugar to a boil. In batches, add the bagels to the water and boil, turning, for 30 seconds to 1 minute. Flip bagels onto the prepared sheet pan. Bake for 5 minutes, turn over [optional] and cook for another 30 to 35 minutes. [If adding struesel topping, spoon topping onto bagels after you've flipped them at the 5-minute mark. Otherwise, add it at the beginning.]
Remove from the oven and let cool on a wire rack.

Mondays, how I love you.

Hello and happy Monday!

Yes, I am actually one of those people that enjoys Mondays.  As much as I enjoy the weekends, I really do look forward to Monday's, why?  On the weekends, I tend to become very... unscheduled.  I am a creature of habit, (over the years I have become better and breaking certain habits... but to a degree), on the weekends however, oi.

This weekend for instance, I saw Harry Potter Friday night (oh my goodness, if you haven't seen it yet, go, go, go!), when I got home at about ten o'clock pm I pretty much went to sleep.  During the night I woke up quite a bit, but I had one of the best sleeps in a looong time, so good in fact that I didn't wake up until one in the afternoon!  I cannot tell you the last time I have slept in that late, even as a teenager I never slept like that, that is, unless Jordan and I pulled all-nighters playing World of Warcraft... but that's another story, and then we'd be going to bed at about five in the morning, so waking up at one seemed logical.  This weekend however, just wasn't like me. 

On Saturday I was not motivated at all to do my regular one hour of biking, instead I decided I want to incorporate strength and abs back into my routine since truthfully I've been neglecting that for the past, errr two months?  Sad I know.  Yeah well, it's Monday, and I'm still feeling Saturday's work out, plus it doesn't help that I did one hour of biking yesterday, and then more strength and abs this morning, eek.  It felt great to use my weights again, do my crunches, and the other little exercises I did.  With that I decided I'm going to start switching my routine up so that I don't get bored and so I'm still motivated :)

The rest of the weekend was okay.  Saturday I did a lot of walking/shopping on one of the main streets in Montreal for shopping.  I went to a vegan restaurant with my mom, had "fish" (which was absolutely fantastic, definitely plan on going back) then came home, and looked at ideas for some tattoos.  I plan on going very soon to get my second tattoo (if we turned back time to six months ago when I got my first tattoo and swore on my life that I'd never ever get another tattoo, and tell past Sam that future Sam wants another tattoo I think I'd die of laughter!  Seriously!)

Sunday I woke up at seven, woohoo, went to Jean-Talon Market, got our fruits and vegetables for the week.  We came home, I made a delicious lunch, then I did an hour of biking, and pretty much spent the rest of the day lounging.  Yes, exciting weekend I know, but I truthfully really enjoyed it.

So again, why do I like Mondays?  I like routine.  I like knowing that I wake up at 4:45 am, hit the alarm for five more minutes, put my work out clothes on, go to the washroom, brush my teeth, get on my bike at 5:00 am and finish at 6:00 am.  Get in the shower, dry off, do my hair, then my make up, and get dressed.  Get my work stuff together, make my breakfast, eat, then leave for work, etc... I like routine.  I like that I start the day off the same way and know what will happen until about 8:00 am, but I know that my day starts off early on the weekdays.  The weekends I sort of become a sloth... which isn't always the case but I've felt so burnt out from work the past few weeks that lounging has unfortunately become habitual.

This weekend + this morning however, I made some really delicious meals.  I'm going to keep it simple and just post what I did instead of going oooohhh, you NEED to make this.  If I'm posting recipes, it's because I loved the outcome and think you should make it, if I didn't like it, I wouldn't post (unless I'm stating this is a failed recipe).

Tropical Fruit Bowl with Lime


*Note: Adding lime to any sort of fruit mixture has become my summer addiction.  It seriously heightens the flavour combination and just creates an utterly perfect breakfast, snack or dessert.

1 peach, cubed
1 kiwi, sliced
1 banana, sliced
1 mango, cubed
1 orange, cubed
Juice from 1/2 of a lime
 
Toss together and voila

Baked Sweet Potato with Broccoli and Cheddar

Now I know why people make broccoli and cheddar soup (I'd never tried this food combination before) and with the added sweetness from the baked sweet potato, hallelujah my friends, hallelujah.

1 sweet potato, cleaned, pierced with fork holes (you can rub it with EVOO + salt if you want, but I didn't) - baked in oven at 425 degrees F for 55 minutes
1/4 broccoli floret (steamed for 2 minutes) and sprinkled with sea salt and pepper
Shredded vegan cheddar + 2 green onion stalks to top it all off
Sprinkled with more freshly ground black pepper

Magical Yoghurt Parfait


Vunderbar is all I have to say.

Handful of PB Puffin's cereal (to die for right?)
Layer of plain yoghurt + 1 tsp cinnamon (I love me some cinnamon)
1 banana, sliced
3-4 dates, sliced

Avocado and Salsa Mash on a Cheddar and Salsa Bagel


When I made my White Chocolate Raspberry Bagels I also made a batch of Cheddar and Salsa bagels.  These bagels are like no other bagels I've had before, hm, maybe other than my Crystallized Ginger and Cinnamon Apple Cider Bagels, oh boyyyyyyyyyy!  I took the same recipe as the White Chocolate Raspberry Bagels, and instead of adding raspberries and white chocolate I of course added salsa and vegan cheddar to my taste.  These bagels oh man, I've been eating them left and right, and unfortunately only have one left.  Since I only have one left I figured my second last bagel needs to be amazing so I did just that.  I've been on a sort of Mexican inspired food thing lately, and so here is where my head was at this morning, which, holy moly it was in the right spot, if you know what I mean ;)

1 avocado mashed with 2 tbsp of salsa + sea salt + pepper
Juice from 1/4 of a lime squeezed on top

Simple and refreshing.

Broccoli, Shiitake Mushroom and Tofu Peanut Butter Bake


I've never had peanut butter with broccoli before but I have had peanut butter with mushrooms and it was amazing, and have also had peanut butter with baked tofu before which was one of the best tofu dishes I've had to this day.  I was craving broccoli and I was craving peanut butter so I figured why not have bake my broccoli, tofu and Shiitake mushrooms and feed all my cravings.  Well I did just that and my tastebuds were definitely dancing and thanking me.  This was so simple to make and the result was fantabulous!

Ingredients for the -

Sauce:
2 tbsp peanut butter
1 tbsp sesame oil
1/2 tbsp soy sauce
1/2 tbsp maple syrup
2 tbsp soy milk
1/4 tsp cayenne
Freshly grated ginger (I love ginger so I tend to put a lot... I probably had about 1/2 tbsp)

+ remaining ingredients for the recipe:
1 floret of broccoli, chopped
6 medium Shiitake mushrooms
3 green onion stalks
Sesame seeds

Directions:

First I heated my stove to 400 degrees F.
I then tossed my TOFU only (which was 1/2 a block of extra-firm tofu in the sauce and let it marinate for 10-15 minutes)
Put the tofu onto a pan and put it in the oven for 20 minutes leaving the remaining sauce in my mixing bowl
I then chopped six medium sized Shiitake mushrooms + 3 green onion stalks and mixed them with the remaining sauce and a generous squeeze of lime juice
Once the tofu was done cooking (the 20 minutes), I tossed the tofu, and added the remaining vegetables.  
I lowered the heat to 380 degrees and baked for 15 minutes.
I then sprinkled the dish with sesame seeds and dug in.
Easy and tasty!

Blueberry Raspberry Nectarine Dream Bars

Here, all I did was made a basis of "Larabar truffles" and flattened the mix, added blueberry jam and spread some raspberries and nectarine slices on top.  If you like Larabars, or the healthy truffles that have been going around the blogosphere for the past few months you simply devour this.  It reminded me of my Peanut Butter and Jam Truffles so it's no wonder I thought this was absolutely dfjasd;lfkjsdlkfj nom-a-licious!

In the bowl of your food processor, mix the following ingredients until a ball forms:

1 1/2 cup pitted, chopped dates
1/4 cup raw cashews
3 tablespoons rolled oats
pinch sea salt
 
Once a ball has form, line a loaf pan with parchment and firmly press your date mixture to the bottom, making an even layer.
Spread an even layer of blueberry jam (or your favourite jam) on top.
Top with raspberries and 1 nectarine sliced with about 1/4 cup of oats.

Devour.

Sorry, I had to get some of that, eeeekness factor out of me.  Monday went by as quick as the speed of light, which I was hoping would be the same for the rest of the week, but unfortunately that just couldn't be the case.  Today was one of the worst days at work, and I'm in far, far too foul of a mood to even get into it, because the /cough nineteen followers I do have, I'm afraid I will make them run for the hills.  The fact that after having two straight weeks of long weekends I'm feeling a little anxious of having a five day week (pathetic?  I know)... that and the fact that Thursday issssss my 22nd birthday, wooooo!

Now, let's set something straight here.  Every single year, starting on June 6th (as it's my cousins birthday, one month and one day before mine) I start my birthday countdown.  Then June 17th, 27th, 30th, 1st of July and continuous until the day comes.  I make a habit of mentioning it any chance I get, THREE MORE DAYS 'TIL MY BIRTHDAY... the thing is, I absolutely hate my birthday.  I love the countdown (as it gives me something to look forward to) but the day of my birthday, it's something I dread every year.  I know that sounds so negative and quite Debbie Downer of me, but for the most part, each year it's a huge let down.  I've made plans to go out for my birthday this year... but we shall see if that happens.

Over the weekend, I decided I would make myself some cupcakes because, /cough, last year I did not get any cake.  I was insanely disappointed since cake is my biggest food obsession (tied with ice cream of course).  Some people like chocolate, or chocolate cake, me it's cake and ice cream, vanilla please.  So, I wanted to make myself a batch of cupcakes (which then turned into two batches since oops I only had a big can of pumpkin in my house)... the more the merrier is how I thought about it.  I figured I'd freeze the batch and unthaw them on Wednesday night so that I could bring in some treats to celebrate my day and again have something to look forward to.  HA HA HA! ...yeah, no.

I found this recipe for peanut butter chocolate pumpkin cupcakes (yes... I even did chocolate since it had pumpkin in it and I wanted to use up my can that I've been hoarding since December).  Well... I chose a non-vegan recipe, and since the can of pumpkin was so big I decided to double the recipe... hahaha, well lesson learnt, don't ever replace more than two eggs in a recipe with flax... or maybe don't ever replace gluten-free ingredients with ingredients that contain gluten, something goes wrong, very, very wrong.  Well, I think it was a combination of both to be honest.  The "cupcakes" turned out to be very dense muffins, no moistness really (other than from the almond butter and or peanut butter I slathered on the interior).

I have to admit... and I say this in a non-cocky douchebaggey way... there are very, very few recipes I screw up.  I mean really, I cannot remember the last time I made something that was so bad I had to throw it out (I may not always make food that others enjoy... different palettes) but, they always please my flavour palette.  These cupcakes however, I looked at them and knew something was off.  The cocoa, holy moly, farrrrr too much chocolate for me, far, far too much.  I mean so much cocoa, that I don't even know if the chocolate-crazed Katie would of approved of these.  Despite how over-chocolatey they were though, the addition of peanut butter/almond butter made them edible.  After really disliking the first one, I gave them a second chance.  I sort of enjoyed the second cupcake.  The third one, I actually really enjoyed.  I then even gave in and had a forth.  Yes, I love cake, no matter how much they suck, do not meet my expectations, are heavy, ugly, non-frosted, I cannot throw out a cupcake/cake/pancake.  Even before, if I made them with eggs and they didn't bake all the way through, were gummy, and I was too lazy to put them back into the oven, I wouldn't even eat around the gumminess, no I took one for the team (haha as if I needed much convincing) and would gobble them down.

These cupcakes are hideous, they are basically jet black, the peanut butter looks like pumpkin (I don't know what my oven did to them), they feel as though they're made of bricks, they are un-frosted, however, after gobbling down quite a few at this point I'm actually beginning to enjoy them, I even look forward to my lunch dessert so I can gobble down those five pound feeling "cupcakes".

I'm not going to post the recipe, because, unfortunately I don't think anyone other than myself would enjoy these puppies.  What I will show you however is what I've been enjoying for breakfasts.  And no, this time it's not smoothies.  I'm feeling a little deterred at the moment by my smoothies, and truthfully, a couple of weeks ago I made these killer delicious bagels that I never posted, had only eaten a few, and have been craving so I figured hey, hey, hey time to eat!

My breakfast yesterday, despite how small and limited it may look, was so insanely filling that if I had to wait to eat lunch at 1:00 pm instead of 12:00 pm I could of probably done so.  It was a simple breakfast, but one of the best in a long time, partially due to the fact of how simple it was to throw together and the result was just so gratifying it was perfect.

I had one banana + almond butter + cacao nibs + coconut + sunflower seeds + raisins with a White Chocolate Raspberry Bagel (recipe below) lightly microwaved (yes... ever since I was younger my brother and I would go to Great Canadian Bagel, ask for a plain bagel microwaved with tonnnnnnnnnns of butter... although my bagel tastes' definitely have veered far, far away from plain bagels, and butter is not something I really choose to put on my bagel anymore I still choose microwaved bagels over toasted bagels).


This morning for breakfast (I truthfully don't know which one I enjoyed more) I kept it just as simple, yet just as delicious!

One orange, cut.
A couple of blueberries tossed in for colour (I don't like uncolourful brown food, yuck processed)
One White Chocolate Raspberry Bagel (recipe below) microwaved for 45 seconds, then tossed into the oven on broil for three minutes with almond butter + 3/4 large banana, sliced
The remaining banana
Garnished with dark chocolate flakes, sugar, and cinnamon!


White Chocolate Raspberry Bagels

Recipe adapted from here

Ingredients:
  • 1 1/2 cups warm water (112-115 degrees F)
  • 2 tbsp dry yeast
  • 3 tbsp sugar
  • 1 tbsp salt 
  • 4 1/4 cups bread flour
  • 8 cups of water, for boiling
  • White chocolate raspberry: 1/4 cup white chocolate chunks - 1/2 cup frozen raspberries
Directions:

In a small bowl, mix yeast, sugar and warm water together and let stand 3 minutes.
Mix your flour with the salt in a large bowl; then add the yeast mixture. Stir until combined and slowly mix in the rest of the flour.

Knead dough on a floured surface for 5 minutes, adding additional flour if necessary. Dough should be fairly smooth and somewhat firm. Place dough in a greased bowl, cover and let rise until double.

Punch dough down (add in your white chocolate + raspberries -- knead just enough to swirl ingredients through the dough). Divide and shape into 12 balls. (For larger bagels, make only 8 balls.) Allow to rest for 5 minutes.

Bring 8 cups of water to boil. Make a hole in each ball of dough and pull open about 2 inches, making a bagel shape. Place the shaped dough onto a cookie sheet and cover for 10 minutes.

Preheat oven to 350 degrees. Drop 2 or 3 bagels at a time into the boiling water for about 45 seconds, turning each once.  Drain cooked bagels on a wire rack.  Place bagels on greased baking sheets.

Bake for 35 minutes, turning once half-way through baking.  Bagels will be lightly browned and shiny.

First post in forever...

Okay, okay, you know you've post-poned blogging a little too much when you're getting messages from people (including your dad) telling you to stop being so lazy and update your blog (love you too daddy).  I'm not sure if it's the gorgeous weather we've been having, the fact that I've been focusing a lot of my free time on biking, that I'm in a new city and incredibly curious, but lately I have been feeling no motivation when it comes to my meals.  If I showed you what I've been having for lunch on certain days you would surely point a finger and laugh in my face... a couple of the people at work did just that.  They've lacked, and have not even been close to being original and all around suck.  Some of them have sucked so much that I end up ditching it, and just eating mass amounts of cake.  I'm not sure what it is lately, but I just feel bleh.  I need to get out of this rut, because to start off I'm going to be a big pudge ball by the end of the summer regardless of how much I'm staying fit.  None of my amazing clothing that I've been buying are going to fit if I continue on this lazy spiral of doom, and I'm just going to feel like a big sac of dirt.  I don't like feeling like this, I just ehhh.

It's been hard the past week... in all aspects, food, sleep, being active, it's just a vicious cycle.  I haven't been sleeping at all and I feel as though that's why my priorities are sliding momentarily.  My menu plan is so bare there are holes and usually my meal plans go into the next week with ideas seeping from the edges.  This week, I have breakfast ideas for each day, with ONE actual meal.  With that being said I've been winging my lunches at night and they're just horrid.

I decided I'm going to write some goals down, some do's/do not's ... i.e. not to binge on a million pieces of cake and see if this inspires me to stop doing what I'm doing.  Truthfully though, I feel better about myself physically/psychologically than I have in an incredibly long time even though my food is horrible, and my sleep is almost non-existent... despite all this I'm still getting between 40-50 minutes of exercise a day so I think that's what's keeping me a little balanced.

Tonight or tomorrow I'm going to have to take some time to do the rest of this week's meal plans or I'm going to be in trouble, as for now, I'm just going to embrace it.  Everyone fall's off the wagon once in a while, we all slip and slide it's up to us not to let it get the best of us.  We need to not focus on the down's, but know how we can bring ourselves back up and know that we aren't stuck forever.  You can't let your mistakes take over, that's when slips become habits, and habits are bad to break.  I've put too much time, sweat, and effort into being fit and healthy to let a little rut take over, so now, it's time to get serious.

Back on track.  Back to making the schedules, back to following the schedules, back to thinking healthy, back to being me :)

Secretly, regardless of how much I miss the blogging world, and my readers it's been nice not to take out my camera every time I make a meal to snap a shot that just end's up being not so pretty, even though in real life my food looks fantastic.  However, I really have missed expressing myself and sharing my recipes so I figured I would do just that today!

With that being said, my breakfasts' have still been full of flavours with them still being healthy so I thought I would share a few recipes of what I've been enjoying.

Mango Breakfast Parfait with Cherry-Banana Soft Serve

This is definitely one of my most memorable and favourite breakfasts from the past couple of weeks.  It is so simple to throw together since you do the majority of it the night before, and you get a refreshingly cool and healthy/tropical breakfast, perfect in the morning after you've biked like a champ and sweat like a maniac.

Overnight Vegan Oats:

Ingredients:
  • 1/3 cup rolled oats
  • 3/4 cups soy milk
  • 1 tbsp chia seeds 
  • 1 tsp cinnamon
Directions:

Mix all ingredients in a medium sized bowl and place in fridge overnight, or for 2-3 hours. Stir well before eating.

Ingredients:
  • Vegan overnight oats (above)
  • Mango chunks
  • Pitted cherries (I used frozen)
  • Cherry Banana Soft Serve (Process a handful of cherries with 1 frozen banana)
 Directions: 

‘Soft serve’: In a food processor, process the frozen bananas with cherries until smooth like soft serve. You can add a splash of milk to help it along.

In a glass, layer the ingredients. I did a layer of overnight oats, mango or cherries, granola, soft serve, repeat.

Creamy Blueberry Coconut Smoothie

Ingredients:
  • 3/4 cup soy milk
  • 6 tbsp oats
  • 1 tbsp chia seeds
  • 1 tbsp blueberry peanut butter
  • 1/2 cup blueberries
  • 1/4 tsp pure vanilla extract
  • Toppings: blueberries/coconut
Directions:


To be made the night before you plan on eating it, or at least 4 hours in advance.

Combine all ingredients in a bowl and place in the fridge overnight.

In the morning, pour ingredients into blender, and process until smooth.

Top with additional blueberries + coconut


Simple snacks:

Orange Peach Dessert Bowl


Ingredients:
  • 1 orange (juices dumped into the bowl) - cut into squares
  • 1 peach - cut into squares
  • 1/2 cup plain yoghurt
  • Dark chocolate orange - lightly zested over top
Directions:

Orange + peach + yoghurt mixed together.  Leftover orange juiced poured over top.  Chocolate zested and voila, simple and delicious!

Orange Cashew Chocolate Truffles

Ingredients:
  • 2/3 cup cashews
  • 1/2 cup + 1 tbsp oats
  • 3/4 cup whole wheat flour 
  • 5 pitted and chopped dates
  • 1 tsp vanilla
  • 1/2 cup maple syrup
  • Zest of 1/2 an orange
  • 1 tsp orange juice
  • 1/2 cup chopped dark chocolate
  • Topping: 1 dark chocolate orange Lindt bar
Directions:

In a food processor, process the cashews and oats until a fine powder appears.  Add your flour and dates and process until fine crumbs.  Now add in maple syrup, vanilla, chocolate, orange zest, and 1 tsp orange juice, puree until a big ball forms.


Take the dough and form into little truffles.  Place on a prepared cookie sheet lined with parchment paper or a baking mat.  Set in the fridge and get ready to melt chocolate.

In a double broiler, melt chocolate and orange zest until creamy.  Remove from heat, and get truffles out of the fridge.  Dip the truffles into the chocolate halfway.

Keep truffles refrigerated or in the freezer.

Coconut Ginger Baked Sweet Potato

Ingredients:
  • 1 medium sweet potato
  • Sea salt and pepper - to taste
  • Coconut flakes - to taste
  • Grated ginger - to taste
  • 1 tbsp coconut milk 
Directions:  

Preheat oven to 425.  Pierce your sweet potato all over.  Place in tin foil, bake for 45 minutes.  Uncover aluminum foil and place the sweet potato back in the oven for five or so more minutes.

Take the potato out, cut in half, mix your coconut milk in your potato so it's a little bit like a mash, and top with remaining ingredients.

Smรถrgรฅsbord of recipes - Part 2

As I said the other day I wanted to do a "Spring clean" of my recipes. I have far too many stragglers that I just want to see out of my photo library, so with that being said I am going to continue my "Smรถrgรฅsbord of recipes".

Kitchen-sink Juice

The first recipe, which I unfortunately deleted the pictures of was dor this amazing, amaziiiiiiing "lemonade". Really it wasn't a lemonade since there was only one lemon, so we'll call it Kitchen-sink Juice. I literally just threw in random fruits that I had laying around my kitchen, and the result was one delicious juice. I don't drink store-bought juice ever, nor do I own a juicer, so I never really "experience" juice other than when I drink my breakfast smoothies. This was such a treat. Surprisingly it lasted three or four days, which honestly came as a shock at how good it was (but it was only Jenna and I drinking it) so perhaps that is why. Here is what I did.

For starters, in the bowl of my food processor I threw in one cup of strawberries. Then through a sieve they went to get rid of the seeds. I then threw in the food processor 1 banana + the strawberry juice.

In my juice jug went 2 cups of coconut water + 3 cups of water + 2 blood oranges + 1 tangerine + juice of one lemon + strawberry mash (with the banana) - stirred that together. At the end I threw in 1/4 cup of maple syrup for additional sweetness.

This was not overly sweet, surprisingly with all those fresh fruits + the maple syrup. It was the perfect amount of sweetness, and it was incredibly refreshing. This would be beyond perfect with the upcoming hot water! I cannot wait to make this again with other random fruits I have lying around the house!

Corn in Chile Coconut Milk

Since the last recipe had coconut, let's do a follow up with the coconut. Whenever I eat corn in the summer it is usually the same, quick and easy... boiled on the stove for seven minutes. I love it just like that, no butter, no salt or pepper, just as is. It's the perfect amount of time for me, not too hard, nor too soft. I love it, especially when you get an extremely sweet corn, ah! However, I saw a recipe for corn that included coconut milk, say what? Yes coconut milk. I never ever ever would of thought of putting corn + coconut milk (and did I mentioned chile powder)? together, yes it seriously was perfect. I made this last week, and even though corn may not be at it's peak of the season it didn't matter, this made the corn stand out. It was sweet with a little zing here and there, it was creamy and it was decadent. Not only that, it was so darn pretty to look at with the little specks of spices! Eeeh, I can't wait for the corn to really hit it's peak of sweetness so I can make this and get the complete impact that those simple ingredients create when mixed together! ...oh boy, imagine this with lime juice freshly squeezed on top just before you're about to take a bite, oh goly jee I think I may have to try that!

Ingredients:
  • 1 - 14 ounce can coconut milk
  • 1 tsp chile powder
  • Dash or more of red pepper flakes
  • 1/2 tsp sea or kosher salt
  • 1/8 tsp fresh black pepper
  • 3 ears of fresh, husked corn
Directions:

Whisk the coconut milk, chile powder, red pepper, salt and pepper together in a greased 8x8 casserole pan. Place the corn in it, breaking the cobs in half if necessary to make them fit. It's okay if the milk doesn't totally cover the cobs.

If possible do this a few hours ahead of time and allow to marinate in the refrigerator, turning the cobs every few hours to make sure all sides are marinated. Preheat oven to 425 degrees F. Bake for 30 minutes, rotating the cobs half way through.

Carefully remove the cobs from the pan lifting out with tongs and a spatula (if you drop them into the hot milk there is a danger of being burned). Serve with sauce drizzled over top. The sauce is also good on chicken and seafood.

Coco-nana Vegan Fudge

Now, I have never been one for fudge. Every Christmas my mom used to make fudge because well everyone loved her fudge, I mean love is an understatement. People would try that fudge and stand around it like it was a new baby, I don't know why. The only time I could ever eat it is when she was testing to see if it was ready and she would dunk it in water, that's it. Other than that the fudge in my opinion was far, far too sweet. When I found a recipe for vegan "fudge" that didn't have crazy ingredients similar to traditional fudge, but ingredients like coconut and banana I knew I was in for a treat. I made this the night after I found the recipe and boy was I in trouble. It was delicious, it is nothing like your traditional fudge (at least mine wasn't in texture/consistency) but I didn't care, they were cut into little squares, looked cute, and definitely satisfied and hit the spot of any sweet craving. This is just another of many recipes that are so versatile to your taste buds alone, since it was the first time in me making this I decided to follow the recipe, but next time I'll definitely be sprucing it up with whatever taste I am craving that day!

Ingredients:
  • 4 tbsp melted Artisana coconut butter (or homemade)
  • 1/2 a large, very-ripe banana
  • 1/8 to 1/4 tsp cinnamon
  • Scant 1/16th tsp salt
Directions:

Make up a batch of coconut banana butter. Then smooth it into a container. (Plastic containers work well, because you can pop the fudge right out.)

Place in the fridge for a few hours, or freeze for a few minutes if you’re an impatient mamacita. You can freeze it for longer periods of time, but just be sure to thaw for at least 20 minutes prior to eating.

Pumpkin Spice Bagels

As I mentioned a few posts ago, before Jordan left for Korea he was insanely sweet and wanted to be an amazing boyfriend and make cookies with me. He didn't only stop there, no he even made bagels with me! Yes, my heart seriously felt like it was going to explode because I was so overcome with joy. It really was nice to make them with him, because 98% of the time has all the patience int he world. I rolled my bagels, had holes, but they just looked, lifeless. Jordan's on the other hand, were perfect circular bagels, with the perfect sized hole in the middle. Needless to say, I mixed the ingredients, divided the dough and his job was to shape those bad boys.

We made these while I was going through my crazy pumpkin faze. Seriously though, pumpkin bagels are fantastic, especially considering pumpkin is crazy flavourful and low in fat, what better thing to put in a bready bagel than that? Perhaps, some fresh cranberries with the pumpkin, oh no, maybe I will have to make these again =\... not that that's a bad thing of course. These were incredibly tasty, and sadly I finished my last one on the weekend :(. I was saving it, yes, weirdo that I am because of the memories that went into them, but it's food, it doesn't last forever and it's meant to be enjoyed gosh darn it! So I enjoyed it, oh I did!

So here is the recipe for these bad boys. They are incredibly simple to make, especially if you have a cute boy helping you shape your bagels :)!

Ingredients:
  • 3 1/4 cups whole wheat bread flour
  • 3/4 cup freshly squeezed orange juice, warmed slightly in the microwave
  • 1/3 cup packed light brown sugar (I used 1 tbsp)
  • 1/2 cup pumpkin puree
  • 1 tbsp active dry yeast
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground allspice
  • 1/2 tsp freshly grated nutmeg
Directions:

Place all the ingredients in the bowl of a stand mixer fitted with the dough hook and mix on low until it forms a shaggy ball, about 4 minutes. Increase the speed to medium and knead for another 5-7 minutes until the dough is smooth. Transfer the dough to a lightly floured surface and shape into a ball. Place the dough in a large bowl that has been lightly coated with non-stick cooking spray. Cover with plastic wrap and place in a draft free area and let it rise for 90 minutes.

Gently remove the dough from the bowl onto a lightly floured surface and press lightly to degas. Shape the dough into a ball and divide it into 8 equal pieces. Roll each piece into a ball. Using a floured finger, poke a whole through the middle and gently stretch the dough using 2 fingers so the whole is about 1/3 the diameter of the bagel. Place on a baking sheet that is lightly greased or lined with parchment paper. Cover and let rest for 20 minutes.

Preheat the oven to 425ยบ and bring a stockpot of water to a rolling boil. Place bagels 2-3 at a time in the boiling water and cook for 1 1/2 minutes on each side. Using a slotted spoon remove the bagels and return to the baking sheet. Continue with remaining bagels. Bake for 20-25 minutes or until golden brown. Remove to a wire rack to cool completely before serving.

Cherry Amaretto Kissed Almond Butter

Okay, I admit these may not be the prettiest pictures, honestly, even after taking two photography classes in high school I still really suck. I was alright at the time, but it seems as though my skills have unfortunately went down. With that being said, don't judge my bagel picture by it's "picture", because they seriously are delicious, and the almond butter that is slabbed on it was insanely delicious as well! I decided to make this a special almond butter, and let me tell you, special it was. It was... ah, I just loved it, I can't even think of words to describe this nut butter.

Here is what I did. I took this recipe and completely changed it just so that I would have a base on cooking times and measurements.

Ingredients:
  • 2 cups almonds
  • 2 tbsp amaretto agave nectar
  • 1/2 tsp vanilla
  • 1/4 cup dried cherries - chopped
  • Zest of a handful of carob chips
  • 2 tbsp canola oil
  • 1/4 tsp sea salt
Directions:

Pre-heat the oven to 350 degrees F and prepare a large baking sheet with parchment paper.

In a medium-large bowl, whisk together the agave, oil, cherries, vanilla, carob zest, and salt. Stir in almonds and continue stirring to almonds are evenly coated. Pour almonds onto prepared baking dish and spread to an even layer.

Bake almonds for 12-15 minutes, stirring occasionally, until almonds are golden-brown and glaze has darkened slightly. Once done, set almonds aside to cool to room temperature.

Once almonds are cool, pour them into a food processor bowl and process for 12-14 minutes, or until almond butter has reached your desired texture. Stop the processing occasionally to scrape the sides of the bowl down with a spatula. Voila, mine took about 8-10 minutes to be completely "butter-esk" consistency!

Cherry Amaretto Cookies of Love

March 25th is the day my brother was born. This year, it was his 19th birthday, woooo go him! For his birthday, my mom, her boyfriend and I went out to the casino to celebrate. We had a fantastic dinner, and then we took Anthony to the floor (he had his first taste of the casino the night before with my dad), but my mom wanted to take him to the restaurant since it seriously is amazing, and so we went and no one complained, especially me when dessert came, oh my goodness. I was in heaven... and it wasn't even my birthday, oops.

The night before I had really, really bad insomnia, so what did I do just like every other night I have insomnia? Bake of course! This time I had very good reason to as well since it was Antoine's birthday. I decided to make cake-box cookies and spruce them up. Well honestly, these were to die for. I'm not even kidding, I changed up the recipe to veganize it (even though the mix itself contains milk powder) but everything else got veganized. I left a couple of these at our house, and well, they didn't last, they were scooped up like there hadn't been food in the house for months, months I tell ya. These really were just that good.

Ingredients:
  • 1 package of cherry cake mix, any flavor
  • 2 tbsp ground flaxseed
  • 6 tbsp water
  • 1/3 cup canola oil
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1/4 cup ground almonds
  • 1 1/2 cups chocolate fudge chipits + semi-sweet chocolate chips
  • Sprinkles until your hearts content
  • Red food colouring just to add a little bit of love
Directions:

Preheat oven to 350 degrees.

Mix your flaxseed and water together, and set aside for a couple minutes until a paste forms. When your egg is ready mix everything together. Form into one inch balls on ungreased cookie sheet or baking pan.

Bake for approximately 7 minutes or until slightly browned, being careful not to overcook.

dksjf;sldj, and that is it for this huge recipe kerfuffle, and it sure feels good to get rid of many recipes that have gone astray. Now, if I can just keep up with my recipes this time around so I won't have to do another one of those for quite some time!

Plain Bagels + Cinnamon Ginger Apple Cider Bread + Crystallized Ginger and Cinnamon Apple Cider Bagels + Apple Spring Rolls

Time and time again I come across bagel recipes. Every recipe I find though just takes so long to make, three days really? I'm not that big of a fan of bagels that I'm willing to put three days of my time aside for a bagel, I mean it's been about eight years since I've had a bagel... that is until I found this recipe. This was one of the easiest recipes I've made since I've started baking. It was so simple and delivered such great results. These gave beautiful brown fluffy bagels. It reminded me of my youth, when my mom would take my brother and I to the Great Canadian Bagel and we would both order chocolate chip bagels and get them MICROWAVED, yes MICROWAVED. I've never been much of a "toasted" person before, and the microwave always gave such ooey-gooey buttery fluffy results. Unfortunately when I ate these bagels I toasted them so I didn't get to experience my fluffy child-hood memory but it reminded me of the warmth and happiness it brought me to. I am definitely keeping this recipe as my bagel go-to recipe. It's so simple I swear anyone who can read can make it. I was thinking I'm going to make a batch very soon and add cranberry, blueberries and orange zest to it, how awesome does that sound? Or a sea of raspberry and white chocolate. Or some lavender and sea salt? Oh my goodness, oh my goodness! I really wish I wasn't at work right now so I could go make some!

Ingredients:
  • 1 tsp quick yeast
  • 3/4 tbsp sugar
  • 3/4 cup warm water
  • 2 cups strong bread flour, plus extra for kneading
  • 1/2 tsp salt
Directions:

As I used mix-in quick yeast, I simply combined all the ingredients in a bowl. If you are using normal dry yeast, sprinkle the yeast and sugar into half the water and leave for five minutes before stirring and then adding to the rest. Pull all the ingredients together with a wooden spoon into a firm dough.

Tip out onto a floured surface and knead until smooth and springy - about 10 minutes. Start to work in extra flour, adding as much as you can while still retaining a firm and smooth dough. Put the dough into a lightly oiled bowl, cover with a slightly damp tea towel and let rise for about an hour or until doubled in size. Punch down and leave to rest for 10 minutes.

Divide the dough into four equal pieces. Shape the pieces into a ball using your hands and rolling it along a surface, pressing down to get rid of air bubbles. Use a floured finger to make a hole in the middle of the ball, then use your fingers to widen it out to about 1/3 of the diameter of the whole bagel. Place on a lightly oiled baking sheet to rest for ten minutes under a damp tea towel.

Preheat the oven to 425F. Fill a large pan with water and bring to the boil. Turn down to keep it at a strong simmer. Use a slatted spoon or similar to lower 1-2 bagels into the water. Boil for about a minute, turning halfway through. Remove, draining any excess water, to the baking sheet. When you have boiled them all, put them into the oven for about 20 minutes. They should be gorgeously golden. Cool on a wire rack.

Makes 4.


Cinnamon Ginger Apple Cider Bread

Since my mom's boyfriend bought apple cider but decided not to drink it I'm having to bake with it. I don't drink juice anymore, but I figure in baking it's not that big of a deal, I'm a weirdo I know.

A little while ago as I was perusing through one of my favourite blogs (never home) maker I came across a recipe for a lovely bread. Even though I really dislike the taste of beer, and it seriously makes me sick to my stomach I considered making this recipe since the alcohol would probably get cooked away and would just leave the nice aroma's behind. However, since I had a ton of apple cider sitting around I decided to switch this recipe around a bit... well a lot. The only thing that remained constant were the measurements.

This was an insanely easy easy bread to make, came out wonderful, smelt amazing and tasted even better. I read some comments from the blog that said it had a muffin-type consistency I didn't get that at all. It was a dense filling bread, but not in the sick to your stomach type dense. It was filling yes, but it was so good it kept me coming back for more. I gave a few pieces to my dad, mom's boyfriend ate one slice, and I embarrassingly ate the rest of the loaf that day. Carb craving much? I think so. I loved this so much, and still have some apple cider left so am considering what to make for the other loaf I am going to make!

Ingredients:
  • 2 cups whole wheat bread flour
  • 1 cup all-purpose flour
  • 1 tsp sea salt
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1 1/2 cups apple cider
  • 1/4 cup unsweetened applesauce
Directions:

Preheat your oven to 375 degrees F. Lightly grease an 8 or 9 inch bread pan.

In the bowl of an electric mixer, whisk together the bread flour, all-purpose flour, sea salt, baking powder, cinnamon and ginger.

In a small bowl, whisk together the apple cider and applesauce.

Using the paddle attachment, stir on low speed and slowly pour in the apple cider/applesauce mixture. Once combined, remove from bowl and knead with your hands until well incorporated. The dough should be somewhat sticky, not too dry. If it is too dry, consider adding a bit of water -- 1 tbsp at a time. If it's too wet, add a bit of flour. You want an elastic ball.

Put dough into bread pan and flatten just a bit to fill the pan.

Bake for 40 to 50 minutes. Until the loaf is golden brown and a toothpick inserted into the center comes out clean.

Let cool in the pan for 15 minutes. Then turn over onto a wire rack.

*Note: tasted excellent with out any butter or anything on it, but for a decadent snack it tasted even sweeter with butter and a sprinkle of cinnamon on top!

Crystallized Ginger and Cinnamon Apple Cider Bagels

Recipe from moi! However it is the same recipe as Plain Bagels, just different ingredients, so I will post the ingredients, but directions are the same as well!

The other recipe I decided to make with some of the apple cider was Crystallized Ginger and Cinnamon Apple Cider Bagels. I decided on this just because I have been craving a lot of breads lately, probably since I don't eat any store-bought so the only time I get it is when I make it, and it's been a while. I decided on bagels because I wouldn't have to eat them all at once, since I could freeze them and simply take them out on a day where I've got the bread craving again. I like this bagel recipe due entirely to it's simplicity and the fact that I could sub-in whatever ingredients I am looking for my bagel to have. I really do love this recipe, especially with the bread flour I have with grains in it, it adds a perfect crunch all around. This was fun to make and it delivered amazing results.

The ginger in the bagel not only adds a hot and refreshing presence but it adds a little sweetness from the sugar. This was certainly the most perfect addition to these bagels, because it's like a cinnamon raisin bagel with ginger instead. They really need to market this bagel, oh man. One had cracked in the stove so I took the liberty of eating it with just ten minutes into baking. It was so soft in the middle (it was cooked), and the crust it had formed was absolutely amazing. Oh my goodness, I should not of baked these, first the bread now the bagels, I'm doomed. Doomed I tell ya.

Ingredients:
  • 1 tsp quick yeast
  • 3/4 cup warm apple cider
  • 2 cups whole wheat bread flour, plus extra for kneading
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1 1/4 tbsp crystallized ginger, finely chopped
Apple Spring Rolls

Since we are on an "apple" theme, I thought that this would be the perfect post to write about this. I keep putting it off because I don't want to only post this, since the picture isn't very pretty but I still wanted to post it because it's an excellent recipe. I made this for a friend one day for breakfast. I didn't try any personally because I had already eaten a large breakfast, but from the way he devoured it and the aroma that came off these spring rolls I could definitely say it was a hit. The brown sugar, spices and butter melted beautifully creating a caramel-like sauce on the inside not making it necessary to have a sauce to go with it. I omitted this because I thought that the sauce would actually take away from the flavours of the spring roll, I can't say for sure since I didn't try but that was my thought process so that's what I ended up going with.

Ingredients:
  • 1 large tart apple, like granny smith
  • 1 tbsp brown sugar
  • 1/4 tsp powdered cinnamon
  • Pinch of nutmeg
  • Pinch of sea salt
  • 12 sheets of phyllo (you will be making 3 ‘stacks’ of 4 layers each)
  • Baking/olive oil spray or 1/4 cup melted butter

Directions:

Pre-heat oven to 375 degrees F.

Peel apple if you wish. Core and then cut the apple into 1/3 inch thick sticks. Toss apple sticks with brown sugar, cinnamon, nutmeg, and salt.

To make the spring rolls, start with 4 phyllo sheets. Place one sheet on a work surface. Spray or brush butter on top of the phyllo sheet. Place another phyllo sheet on top. Spray or brush butter on this sheet. Repeat this for all 4 sheets. You now have a phyllo stack of 4 phyllo sheets. Cut this into 4 equal pieces (they will roughly be squares). Take one square, place apple sticks on it and fold into a spring roll. See detailed pictures and instructions above. Repeat for all phyllo squares.

Place the spring rolls in a buttered or oiled baking sheet and bake for about 25 minutes or till the spring rolls are golden. Serve warm with brandy butterscotch sauce.

Note: You could also use spring roll wrappers instead of phyllo dough. Use 12 spring roll wrappers and leave out the baking spray/melted butter. Fold the spring roll according to the pictures and directions in this post. Dip your finger in water and go around the edges to seal the spring roll wrapper. Make sure all sides are well sealed. Deep fry in oil.
