Super delicious weekends.

Happy Monday,

Hoping everyone's long weekend was spent doing fun things with their family and friends, enjoying the hot weather, and eating good food, I know mine was.  I spoke to you guys on Saturday so you know what my day was like so I shall talk about yesterday.

I didn't sleep again, so at about 6:50 am I started cleaning the kitchen (very silently) as I didn't want to wake my mom... however, lesson learned: no matter how quiet you try to be in a kitchen something ends up making a lot of noise.  Thankfully my mom didn't wake up, she really must of been exhausted.  I kept cleaning, then I ended up chopping up some fruits.  Over the weekend I came across the most delectable, mouth-watering looking rice paper rolls I've ever seen.  No, it wasn't filled with vegetables, rice noodles, meat/tofu, deep-friedness, nothing like that.  It was filled with mouth-watering tropical fruit.  I'm sure by now you all know that I was weak in the knees when I saw this and had to make it as soon as possible!  Well, I did, the next morning.  I switched some breakfast recipes around that I had planned for the week and threw that in.

Holy moly, am I ever thankful I did that.  I would of never thought to put tropical fruit into rice paper rolls.  Sure, I've taken wonton/spring roll wrappers and deep fried them with fruits and chocolate bars, but rice paper with tropical fruit?  Helloooooo.  It's a good thing I saw this recipe though because it just added a whole new dimension to my breakfasts', snacks and desserts.  They were fantastic.  It seriously was a tropical hula party in my mouth, grass skirts and all.  I loved it.  My mom certainly devoured hers too.  I was planning to make a dip with vanilla yoghurt and cinnamon, but... after I saw how delicious they were I just couldn't wait.  Unfortunately my pictures look not so pleasing to the eye, so if you want to see the original recipe that caught my eye, check below.

Tropical Spring Rolls

Ingredients:
  • Handful of cilantro - roughly chopped
  • 1 Manila mango - cut into matchsticks
  • 3 strawberries - cubed
  • 1 kiwi - cubed
  • 1 banana - roughly chopped
  • Flaked coconut
  • Lime juice - to squirt over fruit
  • 4 rice paper rolls
Directions:

The amount of fruit you need will be dependent on how much you add. I added about a tablespoon of berries, kiwi and banana each, and 6-8 mango sticks, plus 2-3 cilantro leaves. You may want more or less.

Place your rice paper under hot water for a couple of seconds until it becomes workable, then pat it dry.  Add fruit in the middle of the wrap; I used mango on the bottom, then stuffed with the remaining fruit + coconut flakes. Some cilantro leaves I chopped, others I left whole – it’s all on your preference.  Then squeeze a tiny amount of lime juice over the fruit. Once the fruit is on the wrap, fold up the bottom and tuck under the fruit. Fold in each side (like you would with a burrito), then roll the wrap to the end. It should seal itself since the wrap is damp. Eat whole or slice in the middle at an angle.

After munching down on those amazing rolls we headed to go do some errands.  Went to the cutest organic little market.  We picked up the most amazing grapes ever, finished them up in the car, yum!  We then did some shopping, had some lunch, (mom's been on a coconut craze lately too... any thoughts why? ;)

We then drove to my aunt and uncle's to pick up my twin cousins.  They came to hang out for a bit, I rode my bike for a whopping fifteen minutes then my aunt and uncle arrived.  My aunt and I headed from our place down to Old-Montreal a whopping two minute walk haha, for a nice 5 km run!  It was absolutely stunning out.  The weather was beautiful, the water was great to run by since it added a litle bit of a cool breeze, and the people, oh my goodness the people.  It was as if there was a concert or something with the amount of people outside, but no, it's just good ol' Montreal where people like to be outside.  I love that, I find it so inspiring that people just sit outside... I don't see that much back home.  I mean, you see people outside but to this extent, never.  I find it really motivating since it makes you get outside and work your booty off ;)

We came home and had dinner.  Another note: buy lettuce from your local Farmer's Market, there is nothing like it.  I couldn't get off the bite, crisp, refreshing, fresh taste of the lettuce I had in my salad last night, it was brilliantly good.  After a delicious meal it was dessserrttttt time!  I had been looking forward to this dessert all week.  I've decided on the weekends for the next couple of weeks (as I try to work through my big pile of saved desserts) each week is going to have one super delicious dessert.

Last week it was the most amazing and beautiful Avocado-Lime Whip Fruit Medley Pizza in a Cinnamon Sugar Crust, this week it was a delicious raw carrot cake.  Well, that's what the title of the recipe was, I'm not sure if mine was technically raw since I don't know the process that goes into making maple syrup.  In this case I suppose I'll call it a vegan carrot cake with the high potential of it being raw ;), does that work?

dflkasmfs;dlfkm wow.  This cake was marvelous, wunderbar, delightful, creamy sans cream, nutty, spicey, just perfect.  When I ate dairy products, and with you all knowing just how much I love cake, cheesecake was not a thing I enjoyed.  Sure, I'd eat it because it was shaped like cake, but did I enjoy it?  Not at all.  To me it just tasted wrong.  All I tasted was curdled milk, I don't know why, perhaps it was because I never really enjoyed cream cheese other than it being in my mom's Mexican dip, but cheesecake, bluh.  Now, if restaurants served this cheesecake on their dessert menu I'd be on my knees begging them for more.  I loved this, even my aunt, who, yes, she does like sweets, I never really see munching on desserts had two pieces and even asked for the recipe.  I loved it, it replicated a cheesecake-like cake completely.

I was so excited too, because earlier this week I had seen coloured carrots, and even though I'd seen them a million times in the last year popping up on people's blogs I'd never come across them in real life.  Needless to say I needed to pick up a bag, regardless of the fact that they taste identical.  I loved the colours of these bad boys, but the durability?  I'll stick to the old school orange carrots from now on.  The coloured carrots were so flimsy... they felt like the stems of broccoli when they're too soft.  I'm not sure why, but it was weird.  They clearly did their job in the taste department but if I were eating them as a snack, just as a carrot stick I'm pretty sure I'd be a little freaked out.

Now onto this weekends masterpiece for desserts, oh yummy.

Note:  I halved this recipe, so I will put my measurements, if you want to see the measurements for a thicker, bigger cake go to the original or just double my measurements.

Tropical Carrot Cake with Coconut Cheesecake "Icing"

Ingredients:

For the carrot cake:
  • 2/3 cup + 1/6 cup raw walnuts - soaked for four hours
  • 1/2 cup de-pitted dates
  • 2 1/2 tbsp + 1/2 tsp raisins
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp ginger
  • Pinch sea salt
  • 1 3/4 cups carrots (cut into 1″ chunks before measuring)
  • 1/4 cup flaked coconut
  • 1/4 cup dried papaya
Directions:

In a food processor, process soaked walnuts until in small bits.

Add the dates and process until no more big date chunks exist.

Transfer nut mixture to a large bowl and add raisins and spices. Mix until well combined.

In food processor, process carrots, coconut and pineapple until fine.  Add carrot mixture to nut mixture and mix until very well combined.  Press into a lightly greased 8 – 9″ springform pan, using a spatula to pat down edges so surface is  flat.

Put in the fridge to set.  Fridge not freezer, it will turn like a cheesecake

Cheesecake Part
  • 1 cup raw cashews, soaked for 2 hours
  • 1/4 cup lemon juice
  • 1/4 cup pure maple syrup 
  • 1 tsp pure vanilla extract
  • 5 tbsp + 1 tsp freshly grated coconut
  • 5 tbsp + 1 tsp coconut oil, melted slowly in oven or on stove
  • 3 – 4 tbsp coconut milk 
Directions:

Process together cashews, lemon juice, maple syrup, coconut and coconut milk.  Then add in the melted coconut oil.  Process until smooth. Taste it and see if it needs anything.  Pour on top of the carrot cake.  Put back in fridge and let it chill for a few hours until set, then enjoy.

Oh my goodness, fantastiiiic.

 

We spent the rest of the night watching movies, it was definitely a nice night.  Then... surprise surprise I couldn't sleep.  Slept a whopping 30 minutes... unfortunately I've had a lot going on in my thoughts so it's been preventing me from sleeping (at least I think that's what it's been from).  Well, we'll see how tonight goes... here's hoping I suppose... despite the circumstance, yes I am being very vague I'm sorry.

Let's just fast forward to this mornings breakfast.  It was heavenly.  It was amazing, no amazing isn't even strong enough of a word to describe what this was.  Everyone went nuts for it, "you can't make something like that with out letting me try it"... I ate a lot less than I thought I would but that's probably a good thing... because it certainly was decadent.  It was just... oh my gosh, I'm already craving it again, it was amazing.  Let's just say, peanut butter, banana and jam + carot chips = one decadent sandwich... but wait, it wasn't a sandwich, non, non, non mes amis.  It was pizza.  Yes, I made Katie's breakfast pizzert again, looooooved it, and will be doing so again :D!

Peanut Butter Banana and Jam Carob Chip Pizzert

Ingredients:
  • 1/2 cup whole-wheat pastry flour
  • 1 tsp baking powder
  • A little under 1/2 cup water
  • 2 tbsp unsweetened applesauce
  • 1/8 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Raspberry jam - enough needed to cover the surface
  • Peanut butter - to taste
  • 1 banana - sliced
  • Carob chips to taste
Directions:

Mix everything from flour - vanilla together and then pour into a pan.  - (I lightly sprayed my pan with vegetable oil spray.)

On your uncooked batter, add your jam, sliced banana, carob chips, and peanut butter.


Cook in an UNpreheated oven at 420 degrees F for 10 minutes, or until a toothpick comes out clean.

I mean really, look at it, dlfjljsdldkfj I'm droooling!

Oh happy day...

Why oh why has this week been so painful for me?  It's not fair.  Is it because I leave Thursday night for vacation?  The work Gods are currently mad at me because I'm departing for a week?  I don't know.  All I know is this week has been horribly, utterly, insanely horrible to me.  Last night I didn't get home from work until after nine o'clock, by that time I felt too drained to do anything, but I had to. I needed to make my lunch, shower, and wanted to do a nice work out on the bike, but could only muster ten minutes... due to the time it took me to make my lunch and the fact that I needed to shower.  The ten minutes was good though, it was intense and it helped a little bit with the stress, but then it started all over this morning.  I didn't sleep too well, I woke up at 4:25 am, and ended up getting on the bike and doing 20 minutes of pretty intense cycling, it felt great. 

Then it was breakfast time.  I wanted a smoothie.  I haven't been making smoothies for breakfast too much lately because my mom took the remaining vanilla protein powder with her to Montreal.  This morning I really wanted one and so that is what I did.  It was delicious, and definitely drank it a little quicker than I should have but it was just darn delicious.  It was filled with lots of flavours and I absolutely loved it!

Matcha Banana Ginger Pick-Me Up Smoothie

Ingredients:
  • 1 tbsp fresh ginger - chopped coarsely
  • 1 large frozen banana
  • 1 tbsp matcha powder
  • 2 cups of spinach
  • 1 tbsp ground flax seeds
  • 1/2 cup soy milk
  • 3/4 cup water
  • 1 tbsp candied ginger


Directions:

Give it a whirl in your blender, and enjoy.

Here I am thinking that this is going to be the starter of everything going well today, bah no.

... it is now time to get ready to leave, and my Lululemon Sigg bottle falls to the ground, and the mouthpiece crackers, perfect, just perfect.


Molasses Peanut Butter Banana Sandwich

Oh well, I wasn't going to let that ruin my day, no, you always have to look at the glass half full not half empty right?  Well, I still had some foodie things to look forward to.  I made myself a mid-morning snack that was devilishly good.  Honestly... I was inspired by molasses cookies I suppose, because we all know those are my favourite flavours, this hit the spot.  Oh man, this was like eating cake, just so much healthier ... and I didn't feel like I needed to eat the whole darn cake to feel satisfied because of the protein from the peanut butter plus the banana it was very filling/satisfying.

Ingredients:
  • 1 piece of ciabatta bread - I need to make more since I used my last one on this... it freezes so, so well!
  • 1 medium banana - sliced
  • 1/2 tbsp molasses
  • 1  1/2 tbsp peanut butter
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
Directions:

Mix together your peanut butter, molasses and spices until a nice smooth spread is formed.  Either eat your bread as is or toast it.  Spread your molasses-cookie spread and top it with bananas.  This is great prepared the night before, the bananas still stay delicious.  Loveeeeee this.  It's a guilt-free cookie, my favourite!

 

Lunch was well, delicious.  Two weeks ago I went to Walmart to pick something up for my mom and I ended up stumbling upon the grocer section and figured I would just do my groceries there since I was already there and honestly the selection was amazing.  I saw so many things that I cannot find elsewhere.  One of these things was marinated tofu.  I used to buy this coconut milk curry tofu from No Frills however they discontinued it... you do not understand how upsetting this is.  It was seriously the most delicious thing ever, I would put it in rice paper with vegetables and it was just perfect.  They discontinued it a while ago though, and I hadn't seen anything similar anywhere else... that is until I went to Walmart.  I came across curry marinated tofu.  


All I did was heat 1/2 cup of water with 1/2 cup of frozen peas, 3/4 cup Shiitake mushrooms, and 4 medium sized carrots until most of the liquid was absorbed.  Then I added the package and voila, lunch was made.  It was simple, it was quick and it surely was delicious!  The package was incredibly cheap too only $1.99.  Now I'm not one for buying packaged foods, but... it was so convenient especially after coming home after 9 o'clock pm, and it was still healthy.  


Lemon Meringue Pie

 For dessert I had vegan lemon meringue pie.  After having huge success, and loving my Banana Cococnut Cream Pie so much I figured I would try making another traditional pie but vegan.  This was good don't get me wrong, but not even nearly as good as the coconut cream pie... however, I'm a sucker for anything with banana and coconuts as we all know, and that was just sinfully delicious.


I pretty much did the same method, so follow along!


Ingredients:


For the Crust:

In my food processor went 24 vegan graham crackers, 1/3 cup coconut sap, 1/3 cup canola oil, 1/4 cup coconut flakes and 1 tsp chia seeds.


For the Filling:
  • 1 12.2 oz silken tofu
  • 1/4 cup sugar
  • 1/2 cup lemon juice
  • 2 tbsp cornstarch
  • Zest of 1 large lemon, grated
Directions:

Combine the filling ingredients together in a blender or food processor until very smooth. Pour this into the crust, and bake for 35 minutes. Cool the pie on a rack, then refrigerate.

Banana coconut cream pie - vegan

I have been eating tofu since I could remember, I mean, when I first started eating it it certainly wasn't used in the healthiest of ways; deep fried with a spicy sauce. It may not of been healthy but it sure was delicious. This was the only way I knew how to eat it... and that was by ordering it at our incredibly expensive Chinese restaurant. Over the years I stopped eating there, because everything was simply unhealthy and well expensive. As the years went on, I started eating tofu in different ways.

Last year I had been perusing blogs and came across a lemon poppy seed cake, what was different in this cake was that the base was made from silken tofu. I had never heard of putting tofu into cake before this time, (even though I had already made tofu cookies and quickly devoured those bad boys). However, I kept putting the recipe to the side, and eventually I deleted it because I wasn't feeling a lemon poppy seed cake. The other day however, I got this epiphany and I wanted to make a pie, a pie using tofu. Even after seeing many vegan dessert/smoothie recipes using silken tofu I never got around to doing so myself.

I came up with a rough sketch of what I wanted to put into my pie. I used a basis for a normal graham cracker crust and veganised it (here I'm using the term vegan because there is no eggs, butter or milk. I do consider honey to be an animal product, however I know there are people who are on the fence of whether or not honey is vegan. For the sake of this recipe due to it not having eggs, butter, or milk I'm going to call it vegan, I even added honey since the agave I have contains nuts and the reason for me making this pie was for a nice lunch with Jenna and she's severely allergic to nuts). With that being said. Here is what I did for the graham cracker crust.

Preheated oven to 350 degrees F.

In my food processor went 24 graham crackers, 1/3 cup coconut sap, 1/3 cup canola oil, 1/4 cup coconut flakes and 1 tsp chia seeds.

Mixed until everything was well dispersed. Dumped into a pie dish, and baked for 10 minutes. Voila, set it aside.

This is where the fun came in! The filling, oh nomnomnom. Again take your food processor out (have I told you before how much I love recipes that you get to use your food processor the whole time?!)

Here I threw in one 12.2 oz package of lite firm silken tofu, 1 tbsp cornstarch, 1/4 cup coconut milk, 1 tsp vanilla extract, 3/4 tsp coconut extract, 1/2 cup coconut flakes, 1/4 cup maple syrup, and one medium/large very ripe banana.

Gave it a whirl. Mixed until everything was thoroughly incorporated. Added it to the graham cracker crust.

Baked it in the oven for 15 minutes at 350 degrees F.

Took that gorgeous, sexy dish out of the oven and became totally encased by it's wonderful aromas. I spoke the other day about the feeling you get when you come up with a recipe on your own and the accomplishment you get, this was it. This was the icing on the cake, the cherry on the icing, it was perfect.

I then mixed 1/2 tbsp chocolate rice milk, 2 tsp cocoa powder, 1 tbsp coconut oil and 1 tbsp honey. Mixed until there were no lumps. Put it into a Ziploc bag and snipped off the corner.

I decorated the pie with sliced bananas (x2) and coconut flakes, some graham cracker crumbs, then drizzled it with my chocolate sauce.

I let it chill overnight. When I awoke this morning... yes I may have had some for breakfast I cut myself off a piece. Um... I was left speechless. It was, I've mentioned before I'm not a pie person, I'm a cake person alllllll the way (Jordan never did like that part about me 'cause he is a pie man all the way!) This however would win me over. I mean, the thing I don't like about traditional pies is the crust, I just find them too doughy. This was perfect. It was light, it was incredibly flavourful, it was more or less healthy, and it was beautiful. Honestly this is the perfect dessert, and if you want to fool for your friends and family into eating something healthy, and vegan (depending on your definition) then you will achieve it with this recipe. I loved it, and will surely be using silken tofu in other desserts to try and make them healthy. I will be making this in the summer that's for sure!

Cranberry Apple Streusel Pie

As I mentioned in my apple ravioli post last year was the first time I had tried apple pie. I remember Jordan had gone on this East Coast trip and went to a place called Big Apple and brought back this gigantic apple pie, and I mean GIGANTIC even bigger than deep dish. If I wasn't such a cake fan that would have convinced to turn over to pie (that and the sugar pie's from Boulangerie St-Donant oh my goshhhhh!). Anyways, we had tons and tons of apples in the fridge and had bought even more fruit when we went to the grocery store even though our fridge was already full on fruit so I thought what better way to get rid of them then some pie? I mean it is Thanksgiving this weekend. My mom's boyfriend loves apple pie so I knew that they would get eaten, and really what is fall with out the beautiful flavours of apple pie?

While this was cooking the house smelt insanely good, the oatmeal on top definitely added to this fragrance. I can't even tell you how good the house smelt. I really wish I had vanilla ice cream to add to this sinful pie. This is farrr farrr from a healthy cake, all the butter and sugar CANNOT be good for you, but it's all within moderation right? Especially if you don't eat this frequently it's okay to indulge with the REAL ingredients once in a while! Ugh I'm drooling just thinking about it, so so good!


Ingredients:

Filling

  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 egg
  • 2 tbsp flour
  • 7 cups apples, peeled and sliced
  • 1 cup fresh cranberries
Crust

2 frozen pie crust's

Streusel

1/2 cup flour
1/4 cup sugar
1/4 cup packed brown sugar
1 tsp ground cinnamon
1/4 cup firm butter
2 Quaker apple & cinnamon oatmeal packets

Directions:

Heat oven to 400 degrees. Place cookie sheet in oven to heat. In 1-quart saucepan, cook 1/4 cup butter over medium heat, stirring constantly, until melted and lightly browned. Cool completely for about 15 minutes.

In a large bowl, beat eggs and 1/2 cup sugar until light and fluffy. Beat in 2 tbsp flour. Beat in cooled butter. Stir in apples. Pour into crust.

In a medium bowl, stir together all streusel ingredients + 1 packet of the oatmeal together except butter. With pastry blender, fork or your hands, cut in 1/4 cup butter until mixture looks like coarse crumbs. Sprinkle over apples. Take your last packet of oatmeal and sprinkle on top of the streusel so that you get an even more delectable crust ;). Place pie on baking sheet in oven.

Bake for 20 minutes. Reduce oven temperature to 350 degrees and cover crust with strips of foil to prevent browning. Bake for 40 to 50 minutes longer or until apples are tender and crust is golden brown. Cool completely.

Apple Pie Ravioli

I promised myself last night that I wasn't going to bake today, or cook anything that follows a recipe. Really, I told myself that and I thought that I could follow through with it. Really, I'm such a sucker, I didn't think I could break that promise to myself so easily. I found the perfect recipe though, and I literally had everything I needed for it. Come to think of it... most of the recipes I get inspiration from I always have the ingredients stocked, it's a wonder as to why I have such a baking/cooking passion. I look for recipes that follow my palette and they always just seem to fall into my lap. This recipe in particular was calling my name. And... to top it all off, it's a PERFECT welcoming to fall. I mean, fall begins TONIGHT at 11:09 pm. But I mean seriously, 11:09 pm, must it be so darn exact? Surprised it didn't even state the seconds.


I love fall though. I'm so happy it's arriving... tonight. It already feels like fall though. The leaves on the trees have began to start changing. Cans of pumpkin and beautiful hues of burnt orange have started flooding the supermarkets. Getting home, hopping into my pjs while sitting around the fire place with a nice cup of tea. Just, it really is a nice time. It's my favourite time of year because it means I get to bundle up and not look like a tart for being in pants and a sweat shirt in the middle of the summer.

When I found this recipe I knew it was a, I NEED THIS RIGHT NOW sort of recipe. Last year was the first time I had apple pie. A little ridiculous right? I'm really not a pie person though, I'm a cake girl ALL THE WAY. I mean, I've been seen on a few occasions to make a cake and eat 3/4 of it in one sitting... gross I know but it's like a bag of popcorn to me, I just cannot stop wolfing it down. I stop and tell myself NO MORE SAM, that's enough! I walk away, then I peer over the corner of the wall, walk a little closer, take the bowl off the cake, and allow myself just one more bite, then 10, then another slice, then the whole ordeal starts over and over again. This recipe was sort of like that. I had a bite of filling. Then another. Then filled the ravioli's and oh darn... there's some filling left? Not a problem, I know what to do with that! Gulp, gulp, gulp, and before I knew it the bowl was empty. I almost contemplated licking the bowl but that my friend would of just been too... gross.
I changed up the recipe a bit though. I've never been a pie person, as stated above, and I've seen people make some really odd apple pie choices. Jordan for instance, when he eats his pie puts cheddar cheese on top and melts it. I'm really iffy about dairy with fruits. Well... that's not true, I mean I'll make smoothies and milkshakes or what not, but cheese... Cheese to me is pasta or bread not bread, fruit and cheese. I don't know... it does look and smell delicious when he does it however. After having the warm ooey-gooey apple with cottage cheese I think I might of been won over. I promise next time I have the luxury of having some apple pie I will try it with cheddar cheese! Until then, I can at least say I tried some sort of cheese with my apples!
Enough talking for today? I think so. Now onto this gift of a recipe!

Ingredients:
  • 2 small Gala apples
  • 1 tsp apple cider vinegar
  • 1/8 tsp cloves
  • 1/2 tbsp brown sugar
  • 3/4 tsp cinnamon
  • 2 tbsp cottage cheese
  • 5 egg roll wrappers
Topping:
  • Cinnamon
  • Sugar
Directions:
In a medium sauce pan, cook the apples, brown sugar, cinnamon and cloves in the apple cider vinegar until the apples have softened. Remove from the heat and set aside to cool.

When the apples have cooled mix with your cottage cheese.

To assemble, brush two egg roll wrappers with water or egg wash. Place a heaping amount of your mixture in the centre of one wrapper, and top with the other, make sure all of your edges are sealed. Use a cookie cutter or keep as regular shape. I decided to trace heart shapes on the ravioli and make them really cute.

Sauté until lightly browned, or poach them into boiling water until the rise to the surface, that's when you know they're ready. Drain and sprinkle generously with cinnamon and sugar.

Serve warm, maybe even with a spoonful of ice cream? I made this as a lunch however, and decided to eat it with Vietnamese tofu rolls, weird sort of mix I know.
