Pasta Scramble

So, this is probably going to be one of the easiest pasta dishes you will ever make. If you know how to make scrambled eggs, you can make this dish!

Ingredients:
  • Macaroni (it's what I used, you can use any kind your little heart desires)
  • Spinach
  • 4 button mushrooms
  • 2 green onion stalks
  • 1 egg
  • Very little old cheddar cheese
  • Sea salt and pepper
  • Couple sprigs of parsley
  • Milk - again I used vanilla-fortified soy milk
*Everything was all to taste, this ended up making two servings. I simply used up all the vegetables that seemed to be going bad... honestly, whatever you would put in your scrambled eggs would go in this.

Directions:

Make your pasta as directed. Toss everything (but your pasta of course) in a bowl as if you would a scrambled egg). Once pasta is cooked, heat a skillet with a little bit of butter. Toss in your pasta and let it sit for a couple minutes browning the edges a little. Once your pasta has begun to brown, mix in your scrambled egg concoction. Stirring every couple of seconds, make sure that your eggs and pasta are well incorporated, you don't want all the egg in one place. After the egg seems to be cooked, and everything is well incorporated, place on a plate and serve!

I of course did not eat this, but the bf seemed to really enjoy this meal. Which I'm glad, it took very little time at all, was a cinch to make, and it used up vegetables that were on their way to the garbage, yahoo!Enjoy :)
