Oven Pasta + Sweet Potato Gnocchi with Brie and Browned Butter

*Note: this was uncooked. I was making them to freeze, these freeze really well, up to a six or so more months.

I don't have a very good picture of what I am going to present, but that shouldn't steer you away from trying this. There isn't a name for this dish really, it's more-so a penne-lasagna, but we call it "oven-pasta". This was one of my childhood favourite dishes. When I went away to University my mom used to make me a few frozen oven-pasta's for Jordan and I to eat. I used to melt every time we ate it. We would seriously eat the whole dish in one evening. It's so good! It's full of cheese, pasta, sauce, more cheese, sprinkled with more cheese, and eggs. This is so so so good! I'm sorry I can't say anything else about it other than you MUST try this!

Ingredients:
  • 1 bag of Penne pasta
  • Homemade Tomato Sauce
  • Cheese - Mozzarella and cheddar
  • 6 hard boiled eggs
  • Spinach (if you want to make it a little healthier, this was the first time I had made it with spinach)
Directions:

Preheat oven to 250 degrees F.

In a large pot boil some salted water. Cook your penne for no more than five minutes, you want them to still be hard so that when you bake the dish in the oven the noodles don't become mushy.

When your noodles are done, rinse and set aside.

Get your tin ready. Spread tomato sauce on the bottom, toss in your ingredients, cheese, chopped up eggs, and spread more tomato sauce all over (make sure it's well coated).

Bake for 45 minutes or until soft.

Sweet Potato Gnocchi with Brie and Browned Butter

For this I used the sweet potato gnocchi I made. I simply browned butter, boiled the gnocchi, when they were done I tossed them into the butter and added some brie. This was such a rich dish, but it was absolutely fantastic. I love those fantastic orange pillows and when added with buttery goodness with cheesy goodness, oh boy, match made in heaven!

Homemade Tomato Sauce + Vegetarian Cannelloni

Homemade Tomato Sauce

I have had canned tomato sauce only twice in my life (that I'm aware of, I mean... hopefully I'm not getting served canned sauce at a restaurant but you never know... although, I don't even eat spaghetti when I'm out so the chances are that I have not had it). My mom is an excellent cook and always made her sauce from scratch. When I was younger I have memories of us making bushels of sauce in the garage with our neighbour, smelling up the whole street and house with the gorgeous scent. Then years we didn't do that we would make sauce on the stove as a replacement. This is the recipe I'm going to show you. I love making it, because it's pretty hands-free, only dirties up one pot and smells the house up for hours! I love this sauce. When I first started dating Jordan he used to think it was so bizarre that I would spoon this sauce into a bowl and just eat it with melted cheese on top, that is until he tried it. When he comes over and knows we have sauce, he gets disappointed if I don't offer him any. Yes, I've won him over to my weird sauce-eating ways :)!

Ingredients:
  • 1 large can GOOD quality tomato juice
  • 1 can Unico tomato paste
  • 1 can Unico diced tomatoes
  • 1 can Unico crushed tomatoes
  • EVOO
  • Garlic
  • Oregano
  • 3 cloves
  • Thyme
  • Rosemary
  • Dash of red chili pepper flakes
Directions:

Over high heat in a large pot heat your EVOO and garlic. Once it starts to sizzle turn the heat to 1. Pour in your ingredients, add your spices according to taste. Stir. Let simmer for 4-8 hours depending on the consistency you would like your sauce. Stir every once in a while so that your sauce doesn't burn at the bottom.

Grab a bowl, toss in some cheese, grab a spoon or some bread and enjoy! It's that simple!

Vegetarian Cannelloni


"Cannelloni (Italian: large reeds) are rectangular pasta sheets that are rolled into a cylindrical shape encompassing a filling. After a pasta sheet has been boiled, it is typically filled with a savory stuffing which may include ricotta cheese, spinach, and various meats. It is then covered with a sauce, typically a classic tomato or béchamel sauce. Cannelloni is often erroneously referred to as manicotti (Italian: sleeves), which is actually a filled Italian dinner crepe, as opposed to pre-rolled pasta. While many Americanized versions believe manicotti and cannelloni are interchangeable, traditional Italian dishes make cannelloni with pasta and manicotti with a specialized crepe pan. Although both terms are plural nouns in Italian, the English term is often construed as singular, particularly when used as the name of the dish." - Wikipedia.

Along with melanzane this was always a favourite of mine. It got the family around the table, (our family was never really one of those families that gathered around the table and had beautiful conversations, we would just sit, eat then scamper off). When having the traditional Italian meals, it just seemed that everyone was happier and it brought everyone together. This is such a hearty meal and is so beautiful on those cold winter nights, with the snow falling and everyone is bundled up. This makes my heart warm just thinking about it. I made this for my family not too long ago because I wanted the beautiful aroma to fill the house. I didn't eat any since it was store-bought cannelloni, but it went quickly. Everyone really enjoyed it which made me happy even though I couldn't eat it. This is definitely a family favourite, and can easily become a family favourite of yours too with just a few simple ingredients!

Ingredients:

Filling:

  • 1 container cottage cheese (opted for this since I wanted to use up my cottage cheese and not have to buy ricotta
  • 1 box of cannelloni shells
  • 4 cups shredded cheddar cheese
  • 1 cup grated parmesan cheese
  • 3 eggs, beaten
  • 1/4 cup chopped basil
  • 1 tsp salt
  • Pepper, to taste

Garnish:

  • Grated cheddar cheese

Directions:

Bring a large pot of salted water to a boil. Cook cannelloni (in batches) according to package directions; drain, rinse in cold water, drain.

Meanwhile, in large bowl, combine your cheeses. Add eggs, basil, salt and pepper. Fill cannelloni shells with cheese filling.

Divide sauce into 6 portions. Spread 1 portion each on the bottom of three 2 L rectangular pans (or similar size pans that will fit 8 manicotti in a single layer). Arrange 8 stuffed cannelloni in each pan. Spread remaining sauce over the manicotti. Cover pans with foil, refrigerate until ready to bake.

Bake at 350-375 degrees F for 45-60 minutes. If you freeze this, take it out the morning you're intending on baking it! Freezes very well.

Really, it is that simple to have a homemade Italian meal, may not be the healthiest but it sure is hearty, comforting and gets a smile on everyone's face!

Two Simple Side Dishes: Oven Roasted Broccoli + Lemon Scented Paprika Asparagus + One Green Pasta Dish

I had never had oven roasted broccoli before... well I mean I am new to the whole eating broccoli. Until just a few months ago when I was willing to try broccoli I had always turned them down because they tasted like dirty feet to me. I'm not sure why, but now, I am hooked on broccoli, I could probably eat it at every meal, I'm serious, in an omelette for breakfast, in a quiche for lunch, in some risotto for dinner, with some dip as a snack, etc... the possibilities are endless. Having your broccoli roasted in the oven is just, it's wow. It makes the flavours that much richer, I have to admit a few of my small pieces because a little burnt (which I still ate because the crunch was awesome) but wow they had such a punch of flavour it was delicious. The ingredients for this were so simple but they made a really big impact on the dish. This was a great side dish and will definitely be made again as well as tried with different ingredients to see how it holds up being roasted! If you've never had broccoli roasted you definitely need to try this out!

Ingredients:

  • 1 1/4 pounds broccoli crowns, cut into florets (about 8 cups)
  • 4 1/2 tbsp olive oil, divided
  • 3 garlic cloves, minced
  • Large pinch of dried crushed red pepper

Directions:

Preheat oven to 450°F. Toss broccoli and 4 tablespoons oil in large bowl to coat. Sprinkle with salt and pepper. Transfer to baking sheet. Roast 15 minutes. Stir remaining 1/2 tablespoon oil, garlic, and red pepper in small bowl. Drizzle garlic mixture over broccoli; toss to coat. Roast until broccoli is beginning to brown, about 8 minutes longer. Season to taste with salt and pepper.

Serve immediately.

Lemon Scented Paprika Asparagus

This is something I threw together as a snack for myself the other night. It's light, refreshing, a little tangy from the lemon zest, it has beautiful colour, plus it is so simple to make and takes less than five minutes. This is great as a snack because it leaves you feeling full, and if it doesn't it's low in calories, sodium and there's no fat or cholesterol so you don't have to feel guilty going back for more. Plus it's packed with potassium, fiber, folacin, thiamin, vitamin B6 plus more.

Ingredients:

  • 1 package of asparagus
  • Zest from lemon - as much as you'd like
  • Paprika

Directions:

Gently snap your asparagus from the bottom, this will take off the woodiness of the asparagus. Wash your asparagus and place in a microwaveable dish. Add 2 tbsp of water and microwave on high for 2-3 minutes.

Zest your lemon and sprinkle with paprika. That's it, see how simple it is? And... how pretty is it? Imagine this sitting in the middle of your wooden table with a beautiful meal, ahhh!

Spicy Spinach Pasta With Garlic And Basil

This was such a simple yet beautiful main dish. It was easy to make, it took less than fifteen minutes, and it was so full of flavour. It's packed with garlic, basil (oooh I love the smell and taste of basil) and cheese with just the right amount of kick from the crushed red pepper, or if you don't want it spicy you can always leave that out. This is so good, I used my spinach rice spaghetti noodles so that added a beautiful flavour plus colour too. This really was good, and it was healthy, plus the wine made it even more flavourful, yummmmmmy.

Ingredients:

  • 12 ounces spinach linguine
  • 6 tbsp extra-virgin olive oil
  • 1 cup chopped fresh basil, divided
  • 4-5 garlic cloves, minced
  • 1/2 tsp dried crushed red pepper
  • 1/2 cup dry white wine or water from cooking the pasta
  • 1 1/2 cups grated Pecorino Romano cheese, divided

Directions:

Cook linguine in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1 cup pasta cooking liquid. Return pasta to same pot.

While the pasta is cooking or after it has been cooked and drained, heat olive oil in heavy large skillet over medium-high heat. Add 1/2 cup basil, garlic, and crushed red pepper; stir 1 minute. Add wine (or pasta cooking water) and boil until slightly reduced, about 3 minutes. Add mixture from skillet, remaining 1/2 cup basil, and 3/4 cup cheese to pasta. Toss over medium heat until sauce coats pasta, adding reserved pasta liquid by 1/4 cupfuls if the pasta seems dry. Season with salt and pepper. Transfer to bowl. Sprinkle with remaining 3/4 cup cheese.

Spinach Egg Noodles + Spinach Lasagna + Summer Squash with Chevre and Thyme + Spinach Rice Pasta with Vegetables

If you have a free day coming up and have nothing planned keep it that way! I have something for you that will take up the better part of your morning but is so so worth it!

I found this recipe a few weeks ago and was so intrigued by it. While shopping at the grocery store with my dad I came across spaghetti rice noodles. Now let me tell you, these noodles are SO fantastic. Egg free, gluten free, wheat free, can it get any better than that? To top it all off it taste amazing, I mean much better than your whote flour or whole wheat noodles. They're even so full of flavour that if you're feeling lazy you don't even really need to throw much in with your pasta to make it taste fantastic.

When I found this recipe for homemade spinach lasagna noodles I was so excited. I didn't realize how much time it would take to actually make them and roll outhe dough, but let me tell you I would do this over and over again, it is so worth the time and labour you put into this and trust me the people who goble it up woth you (if you're willing to share) will appreciate it.

First let's start with the spinach noodles, and then I will go onto to show you what I did for my healthy and delicious filling!

Spinach Egg Noodles

Ingredients:

  • 2 jumbo eggs
  • 10 ounces fresh spinach, rinsed, stemmed, cooked, squeezed dry, and finely chopped.
  • 3 1/2 cups all-purpose unbleached flour
To mix the pasta:

Place all of the ingredients in the bowl of your Stand Mixers. Mix with your Dough Hook until all the dough comes together and is a nice smooth ball of dough. Let it knead for about 5 minutes. If it isn’t coming together add a few more tablespoons of flour.


Wrap the dough in plastic and let it rest at room temperature for at least 30 minutes or up to 4 hours. (I wrapped mine and put it in the refrigerator until the next day. I let it come to room temperature before I rolled it out. It was wonderful to roll!)

Cut the dough into four equal pieces. The smaller pieces will be easier to roll out nice and thin.

Use a rolling pin to get the dough thin. Continue rolling and stretching, until your dough is the desired thickness. Make sure you continually check the dough to make sure it isn’t sticking to your counter. Use a Pizza Wheel to cut the desired shape and size of pasta, lasagna noodles are large flat sheets so this is easy.

Lay on a drying rack. Once the pasta is dry you will bring lots of water to a boil, salt it really well and boil the pasta for 2-3 minutes. It won’t be completely cooked, not even close. It will merely soften slightly so you can arrange it in the lasagna pan. It will cook completely when the lasagna is baked. If you over boil the noodles they will be mushy by the time your lasagna bakes.

Now onto the filling recipe!

Ingredients:
  • Spinach noodles
  • 1 can crushed tomatoes with 1 tsp dried thyme oregano rosemary and 1/2 tsp chili peppers
  • 1 bunch kale, ribs removed
  • 3/4 cup spinach sauteed
  • 1 tbsp EVOO
  • 1 clove crushed garlic
  • 1 bunch of basil
  • Sea salt and freshly ground black pepper
  • 2 1/2 cups cottage cheese
  • 1 egg
  • 1 hard boiled egg sprinkled on top
  • 1 summer zucchini cooked slightly in EVOO
Directions:

Boil a large pot of water with a generous amount of salt. Once your water comes to a boil, put your noodles in gently and cook for 2-3 minutes until tender but not mushy.

In a medium skillet, slightly wilt your bunch kale and fresh spinach in EVOO with 1 clove of garlic crushed. Set aside. Cut your summertime squash and sautée for about 2 minutes, set aside.

In a food processor or blender purée your cottage cheese, basil, egg, sea salt and pepper.

Open your can of crushed tomatoes, if you decided to be lazy like me and not make homemade tomato sauce. Toss in 1 tsp of dried thyme, oregano and rosemary. Adjust red chili peppers to taste, I put 1/2 tsp. Mix until all herbs are incorporated.

Get your lasagna dish out, depending if you want to make mini lasagnas, or large etc... I got two large lasagnas out of this recipe.

Spread some sauce mixture evenly on the bottom. Top with spinach noodles. Then with cheese mixture. Following with vegetable mixture, then top with some summertime squash. Repeat until you reach the top. Then, sprinkle the hard boiled egg and cheese if desired.

Cook on 350 degrees C between 45-60 minutes.

I honestly cannot tell you how delicious this recipe is. Its so good you don't even need to put cheese on top (I mean really if you're a giant cheese fan go ahead) but its rich enough without it. I loooooved this meal! It was divine absolutely divine. I will definitely make this again especially if I have family or friends coming over for a special dinner. I know the pictures may not show how amazing the quality of this lasagna is but do yourself a favour and just trust me on this one. Let's just say that people who I fed this to that don't regularily eat vegetables went for seconds!Trust me, put a few hours aside and you will be thanking me, ah!

Summer Squash with Chevre and Thyme

I also have this recipe, (which I don't have the picture yet since it's on my main computer), but I figured since this goes hand in hand with the lasagna I might as well update it here and will add the pictures when I get my computer back.

This was a delicious meal. This is the dish that introduced me to summer squash. I had never had it before but had bought it with my zucchini because I wanted to brighten up my dish. I was pleasantly surprised when I bit into it and it wasn't the same flavour as the zucchini but a rather sweet one. It reminded me of a sweet potato in zucchini form. This was so good, I couldn't stop picking it off of the pan and just eating it like that. My friend devoured it also. This was so simple to make, it's healthy and it just screams summer. I absolutely fell in-love with this vegetable and cannot wait until next summer so I can stock up and try this great veggie in different dishes! If you still have some summer squash laying around I highly suggest making this.

Ingredients:

  • 4 young summer squash, sliced 1/2” thick
  • 1 1/2 teaspoons fresh chopped thyme, divided
  • 2 oz chevre
  • EVOO
  • Sea salt

Directions:

Preheat the oven to 400 degrees.

In a bowl, toss the squash slices with 1 teaspoon of the thyme, enough olive oil to lightly coat, and a generous pinch of kosher salt. Place the squash slices on a baking sheet in a single layer and season with a bit more salt. Roast the squash for 15-16 minutes, turning once halfway through.

Remove the squash from the oven and place on a serving platter. If you’d like, drizzle on a little more fresh olive oil and add another sprinkling of salt. Crumble the chevre over the squash and top with the remaining half teaspoon of thyme. Serve warm or at room temperature.

Spinach Rice Pasta with Vegetables

As I said earlier I had recently picked up a package of spaghetti rice pasta, I figured I might as well show you guys what I did with that eh? This really was a good dish. Very, very, VERY green though, I wanted to add more colour but it seemed everything in my fridge at the time was only green, oh well, it's still healthy!

Ingredients:

  • Bunch of spinach rice spaghetti
  • 1 1/2 green onion stalks
  • 1/2 green pepper, chopped into little cubes
  • 2 kale stalks, ribs removed
  • 1 clove of garlic, minced
  • Bunch of basil
  • EVOO
  • Pinch of red pepper chili flakes
  • Parmesan 1/4 cup + more for sprinkling on top
  • Starch water

Directions:

In a large pot bring water to a boil with a generous amount of salt. When water has begun to boil, cook pasta according to the package.

In a medium skilled, heat EVOO. When the EVOO has heated toss in your peppers, let them cook for about 3-5 minutes. Add your kale, basil, garlic, green onions and chili flakes. Once the spinach and kale have wilted, turn the heat to your lowest temperate.

Dump your water once the spaghetti has finished cooking but leave a bit of the starch water to toss into your vegetables since this will be the base for your sauce. Toss the water into the pan and add the parmesan. Mix well. Add your pasta, make sure it's well coated.

Plate and top with parmesan, and voila!

I know this was a big post, but I really hope you like it. I had so much fun making each and every one of these dishes and the tastes' my palette go to experience was just... there are no words for it, until you've had it you will then know what I am talking about!

Quick Asparagus and Spinach Lasagna, Mushroom Ravioli, Wonton Soup with Shrimp, Wonton Soup with Tofu

Here are four dishes both made with wonton wrappers. I saw the spinach lasagna recipe and was in awe that wonton wrappers were used instead of pasta, this instantly got me excited since I can't eat pasta anymore, and rice doesn't affect me as much so I was willing to give it a try. I absolutely loved this dish. The picture may not be the prettiest thing in the world, but it really was a delicious meal. I then started thinking what else I could make with wonton wrappers. I'm not sure why I never thought of doing these things before now, but I'm glad I found it so that I can now still enjoy meals that I used to eat, may not be the same, but to be honest I actually think they're better than pasta. With that being said, on the trek for more recipes using wonton wrappers I thought about my favourite Asian soup... WONTON SOUP! This was a childhood favourite of mine, but I hadn't had these in years since I had stopped eating pork and could never find a restaurant that made simply shrimp wonton's... not sure why really. Whenever I got wonton soup, I gave the noodles away, and just sucked down that broth, because really it's absolutely FANTASTIC. Both of these wonton recipes that I am about to show you are the best versions of this soup I have ever had in my life. Even my boyfriend was like, "Wow Sam, this actually tastes' authentic", thanks for believing in me ;). Kidding, but really. So great, these two are definite keepers, and must-tries for all who are wonton soup fans. So here are the recipes... enjoy.

Quick Asparagus Lasagna

Ingredients:
  • 2 teaspoons extra virgin olive oil
  • Sea salt and ground black pepper
  • 1 bunch asparagus, trimmed
  • 1 bag of baby spinach
  • 1 medium onion, halved and sliced (about 1 cup)
  • 2 garlic cloves, sliced (about 2 teaspoons)
  • One 15-ounce container cottage cheese
  • 2 teaspoons unbleached all-purpose flour
  • 18 refrigerated wonton skins
  • 8 ounces Parmesan cheese, coarsely grated (about 2 cups)
Directions:
Preheat the broiler to high. Lightly oil a rimmed baking sheet and a lasagna pan (9-by 13-inches roughly). Combine the oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a shallow bowl. Peel the lower stalks of the asparagus if they are thicker than 1/3 inch. Toss the asparagus in the oil mixture and arrange at one end of the oiled baking sheet. Toss the onion and garlic in any remaining oil in the same bowl and arrange them on the other end of the baking sheet. Broil until the edges just begin to brown, about 5 minutes. If using spinach, you could sauté it on the pan with a little bit of olive oil.

Reduce the oven to 375°F. Combine the onion and garlic with the cottage cheese, flour, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a blender; puree until smooth. Cut the asparagus into 1-inch pieces. Arrange 6 wonton skins in the bottom of the pan. Top with half the asparagus, one-third of the cottage cheese mixture, and one-third of the Parmesan. Add another 6 wonton skins, the remaining asparagus, and another third of the cottage cheese mixture and Parmesan. Top with the remaining wonton skins, cottage cheese mixture, and Parmesan.

Bake the lasagna in the top third of the oven, 30 to 35 minutes, until bubbly and lightly browned.

Mushroom Ravioli

Ingredients:
  • 1-2 tsp EVOO
  • 2 cloves garlic
  • 1 large onion, finely chopped
  • 1-2 pinches dried thyme
  • 1/2 cup cottage cheese
  • 10 button mushrooms/10 Cremini mushrooms
  • Sea salt and freshly ground black pepper to taste
Directions:

Heat the oil in a nonstick skillet. Add the garlic and fry for about a minute, then add the onion and saute until it's transparent and has a light golden hue.

Add both the mushrooms and the thyme. Cook until the mixture becomes somewhat dry; about 15-20 minutes.

Remove from heat, cool a bit. Stir in the cottage cheese. Check seasoning and add salt and pepper as needed.

Place about 1 to 1 ½ tsp of filling in the center of the wrapper. Seal the edges of the wrapper with water and wrap the wonton.

Repeat until the dough and filling is used up.

Boil the ravioli in batches in lightly salted boiling water for about 2-3 minutes. Drain and toss with desired sauce/vegetables and sprinkle with grated cheese.

Wonton Soup with Shrimp

Ingredients
  • 1 Packet Wonton Wrapper (40 pcs)
  • 8 cups homemade vegetable broth
  • 2 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 bunch Bok Choy, trimmed
  • 2 stalks scallions, finely chopped
  • Sea salt to taste
  • Freshly ground pepper
Vegetable Broth Ingredients:
  • 8 cups water
  • 3 large carrots
  • 3 celery stalks
  • 4 button mushrooms
  • Sea salt
  • Pepper
  • 1 bunch fresh rosemary
  • 2 vegetable bouillon cube
Filling Ingredients:
  • 3/4 peeled shrimps, finely chopped or minced
  • 2 stalk scallions, finely chopped
  • 1 tbsp minced fresh ginger
  • 1 tbsp cornstarch
  • 1/4 tsp ground black pepper
  • 3/4 tsp sea salt
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
Directions:

Combine vegetable broth ingredients in a large stock pot and let simmer on medium-low for 30-45 minutes. Set aside.

Combine the wonton filling ingredients and mix well.

Place about 1 to 1 ½ tsp of filling in the center of the wrapper. Seal the edges of the wrapper with water and wrap the wonton.

Blanch the vegetables in a saucepan with boiling water and ½ tsp of salt. Cook for about a minute, drain and set aside.

Bring a saucepan of water to a boil with a few drizzle of cooking oil. Cook the wontons for about 4 minutes. Remove the wontons with a slotted spoon and divide the portions into each bowls.

If your vegetable stock has gotten cold bring it back to a boil. Add the sesame oil, soy sauce and sea salt to taste.

Ladle the vegetable stock into the bowls of wontons. Top with vegetables, chopped scallions and some freshly ground pepper.


Wonton Soup with Tofu - used same directions as above except I changed the filling

Ingredients:
  • 1/2 cup button mushrooms, finely chopped
  • 2 stalks green onions
  • 1/2 cup firm tofu, finely chopped
  • 1 tbsp fresh ginger, minced
  • 3 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1/2 tbsp rice wine
  • 1 tbsp sesame oil
  • 1/2 tsp salt

Orecchiette, Cilantro Pesto, and Parsley Pesto

Orecchiette with Parsley Pesto

My insomnia has been really bad lately. I mean so bad that I am literally baking and cooking at one-two in the morning, yeah... I have been sleeping about three-four hours a night, tons of fun... Anyways this has led to some really good food if I do say so myself.

As I mentioned a while ago, I've become really interested in making bread products. The first thing that got me into the "bread" making was my gnocchi. This also allowed me to get in touch with my Italian side. I mean, ever since I stopped eating bread and pasta myself, I don't really cook it for the bf, and I actually feel as though part of my nationality is gone. I know, a little strange but that's always been a staple in our house, and I just cut it out completely. At least I live with someone who still enjoys that food.

The other day as I was doing my normal perusing through food blogs I came across a recipe for orecchiette, which in case you don't know translates into "little ears", a little morbid if I do say so myself. I got extremely excited becauuuuse you don't need a pasta machine for this! *Throws hands in the air and starts doing a happy dance! There aren't many pasta recipes that you can make without the machine so I was ecstatic. Well, seeing as I couldn't sleep, this is what I made.

Last night, I then came across a recipe for cilantro pesto, and boy was I happy I found that. Last week when I went to the grocery store I thought I was going to need insane amounts of cilantro for the week (why did I think that? I don't know, but I had a whole bunch of cilantro that was going to go to waste) my food angels spoke to me and allowed me to find this recipe and save my cilantro! So, at 12:30 am I hopped into my little kitchen and started picking the cilantro leaves off their stems and pulsing them in my extremely small food processor. I decided to use the previous recipe as a guideline and sort of did my own thing, so here is what I did.

Ingredients:
  • 2 1/3 cup cilantro leaves, packed
  • 3 garlic cloves
  • Lemon juice from the bottle, about half of a lemon
  • Sea salt and Pepper
  • Handful of pine nuts
  • Slight drizzle of EVOO
Directions:
Throw everything into your food processor, pulse until it looks like a spread.

In my case, I actually ended up using the pesto as a sauce. With that being said, this is what I did for the bf's meal. I cooked the orecchiette on the stove for four minutes. Heated a skillet with butter, through in the pesto, and added some soy milk to make it a little creamy. Added the orecchiette and tossed it around for a minute. Then served.

He really enjoyed it. Said the orecchiette could of probably been cooked a little longer, since I did have them in the freezer, whoops, this is what happens when you can't taste your food. He said the pesto was extremely flavourful. And I mean, the bowl of food was gone in less than ten minutes, as I was in the kitchen I kept hearing the clinks of the fork hitting the bowl and that brought a gigantic smile to my face!

I also decided that since the cilantro pesto was such a hit that I would use up our supply of fresh parsley and make some pesto with that. So here is what I did for the parsley pesto :)

Ingredients:
  • 2 cloves garlic
  • 2 cups fresh parsley - packed
  • Sea salt and pepper
  • 1/3 cup EVOO
  • 1/2 cup grated Parmesan
Directions:
In a food processor place the garlic, parsley, pinch salt, and cheese. Process until they form a paste. Gradually blend in olive oil, taste adjust your seasoning if necessary.

Pasta Scramble

So, this is probably going to be one of the easiest pasta dishes you will ever make. If you know how to make scrambled eggs, you can make this dish!

Ingredients:
  • Macaroni (it's what I used, you can use any kind your little heart desires)
  • Spinach
  • 4 button mushrooms
  • 2 green onion stalks
  • 1 egg
  • Very little old cheddar cheese
  • Sea salt and pepper
  • Couple sprigs of parsley
  • Milk - again I used vanilla-fortified soy milk
*Everything was all to taste, this ended up making two servings. I simply used up all the vegetables that seemed to be going bad... honestly, whatever you would put in your scrambled eggs would go in this.

Directions:

Make your pasta as directed. Toss everything (but your pasta of course) in a bowl as if you would a scrambled egg). Once pasta is cooked, heat a skillet with a little bit of butter. Toss in your pasta and let it sit for a couple minutes browning the edges a little. Once your pasta has begun to brown, mix in your scrambled egg concoction. Stirring every couple of seconds, make sure that your eggs and pasta are well incorporated, you don't want all the egg in one place. After the egg seems to be cooked, and everything is well incorporated, place on a plate and serve!

I of course did not eat this, but the bf seemed to really enjoy this meal. Which I'm glad, it took very little time at all, was a cinch to make, and it used up vegetables that were on their way to the garbage, yahoo!Enjoy :)
