The MIGHTDIEFOR Smoothie

Regardless, I didn't sleep really well, my fault however, but still. I wanted to make a really delicious breakfast with a little bit of a pick me up. I settled on something called a "TODIEFOR Pumpkin Smoothie". I suppose you could call what I made a smoothie, however, I stuck it in a bowl, ate it with a spoon... eating it more like a yoghurt. Is it to die for? I wouldn't say that... after this I will be showing you guys a smoothie that I had on the weekend THAT was to die for. After work yesterday, mom and I did the groceries, you can bet yourself I bought a can of pumpkin I am so obsessed lately. Last week I had bought two sweet potatoes and didn't end up using them, so I got mom's boyfriend to bake them up for me last night, and I made myself this "smoothie" with sweet potato instead of squash. I certainly liked this. It had a huuuuge kick from the ginger, and it really did have a nice sweetness from the sweet potato. I really did like this and would definitely make it again, I just wouldn't call it a TODIEFOR smoothie.
Ingredients:
- 1 frozen banana
- 1 cup vanilla soy milk
- 1/2c pumpkin puree
- 3/4 cup cubed sweet potato
- 1/2 scoop vanilla whey powder
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/8 tsp cloves
- 1 tsp fresh grated ginger
- Topped with granola
Give it a whirl in your blender and munch.
Pumpkin Pie Smoothie

I just want to post the smoothie I had the other day that literally WAS to die for. This smoothie tasted like pumpkin 100$ to a t. Yes, the above tasted like pumpkin pie as well, but this smoothie I don't know what made it so fantastic it was just sinful. Honestly, I've been craving it since I made it! Ahhh, need to make again. I think this may be my favourite smoothie, well tied with the Carrot Cake Smoothie/Banana Chai Smoothie. Ugh, this seriously would be the most amazing drink in the fall, and I couldn't think of a more delicious drink to make me escape from the winter blues, scrumptious!
Ingredients:
- 1 cup soy milk
- 1/2 cup canned pumpkin
- 1 heaping tsp pumpkin pie spice (or 1 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp nutmeg)
- 1 tsp blackstrap molasses
- 1/2 serving vanilla whey powder powder
- 2 large ice cubes
Directions:
Add all ingredients into a blender and process until smooth.
Serves 1.
Apple and Poppy Seed Coleslaw

Today was very much a salad day. I've been eating so many of the Rainbow Chard Veggie Burgers, they're just seriously so good! Plus, I mean after going years of not eating burgers, it's nice to have something to replicate it. Today however, I wanted something really fresh! So for lunch I had this Apple and Poppy Seed Coleslaw. It was really delicious. I adapted the recipe a bit... because mayo in my opinion is just gross, and I've really taken a liking to plain yoghurt. I really enjoyed this lunch. It had crisp from the broccoli and carrot slaw, and the mix of sweet crunch from the green apples were absolutely wonderful. I love the look of poppy seeds regardless of their flavour or not, I find it just brightens up a dish so, so much. This really was a great lunch, plus it was incredibly quick to toss together the night before, and just cut the apple at lunch, voila!
Ingredients:
Dressing:
- Juice of 1 lemon
- 2 tbsp plain yoghurt
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp poppy seeds
- 1 tsp salt
- Freshly ground pepper
- 1 green apple, cored and sliced thinly
- 4 cups carrot and broccoli slaw
- 1 cup slivered almonds - opted this
Directions:
Whisk the dressing ingredients together until well combined. Place the apple and cabbage in a big bowl and toss with the dressing. Cover and let stand for about a hour
Fruity Kale Salad with Coconut Lime DressingRecipe adapted from here
Last week I made this absolutely beautiful and tasty salad. It was huuuge too, and I ate the whole darn thing. I took two heads of romaine lettuce (Andy Boy) so it wasn't those big round heads, 1 can of mandarins, 1/4 container of strawberries, and 1 container of blueberries, chow mein noodles and lime juice and coconut sprinkled on top... yeah I devoured it. When I found a recipe for something incredibly similar I decided to alter it, and pack it in my lunch today. I mean, I don't really need to describe how good it was. It had my favourite berries, delicious and oh so nutritious kale, tomatoes, and a beautiful lime and coconut dressing, can you go wrong? Absolutely not. Since last week, I've made quite a few fruit salads and will continue to do so. Fruit salads, autumn spice flavours, can you tell how much I want the cold winter weather to just go away already? Ugh...
Ingredients:
Salad:
- 6 large leaves of fresh kale, rinsed and dried
- 1 tomato
- 4 large strawberries, sliced
- Couple chunks of pineapple
- 1/4 cup dried coconut
- 2 tbsp lime juice
- 2 tbsp olive oil
- 2 tsp agave
- 1 tsp flaxseed
- dash or two of salt
Directions:
First, chop up kale into bite sized pieces. Next, mix up the ingredients for the dressing in a separate small bowl until well blended.
Then, salt the kale leaves lightly and toss. Massage the dressing (using your very clean hands) into the leaves until the kale becomes wilty and well coated with the dressing.
Now, in a separate bowl, take all of the chopped fruit and mix with the wilted kale. Top with a little more of the dried coconut.
Apple Crisp Truffles

Again more fall flavours ;) ... who doesn't like apple crisp though? These were perfect bites of apple crisp, the flavour was everything I could ask for in apple crisp minus the oats, but that could easily be thrown in. These were good, seriously popped them like candy, and didn't feel an ounce of guilt, yum!Ingredients:
- Heaping 1/4 cup chopped soft Medjool dates (about 3 pitted dates)
- Heaping 1/4 cup finely chopped dried apple rings, preferably unsweetened & unsulfured (about 4 full rings)
- 1/3 cup raw walnut pieces
- 1 tbsp unsweetened applesauce
- 1/2 tsp pumpkin pie spice
- 1/4 cup finely chopped raw pecans or walnuts <-- opted this, thought there was enough crunch from the walnuts inside the truffles, however mine aren't as pretty
Directions:
Place chopped dates and dried apples into the bowl of a food processor, and process until they form a chunky paste, about 20-30 seconds. Place 1/3 cup pecan pieces into the food processor bowl along with the dried fruit paste, and process until mixed, about 10-20 seconds. Add the applesauce and apple pie spice to the mixture. Process until incorporated, about 10-20 seconds. Remove mixture from food processor.
Form 6-8 small balls out of the mixture by rolling them between your palms. Set aside.
Place the 1/4 cup finely chopped pecans onto a cutting board or plate and roll the balls around in the nuts until fully coated. Once again, roll the balls between your palms so that the nuts adhere and create a “crust”.
Store in the refrigerator.
As a side note, when my mom and I went to the grocery store last night, we went in the city we're working instead of at home. Needless to say the demand for ethnic food is a higher priority than where we live. I was kind of in heaven, and decided to stock up on "exotic" fruits since they were on sale. I decided to buy guava, dragon fruit (to me it taste almost like water, but I love the little seeds in them and find it to be such a beautiful fruit so I picked it up), star fruit (one of my favourites!), and I bought pummelo, I had never heard of this fruit, but am really excited to try it!What was even more awesome was the bag of bananas we got for $1.49. I mean look at the amount of bananas, I'm going to have so many bananas, the recipes are going to be endless. My mom made a comment how we looked like monkeys... psh. (Which I will be posting after...)
use all those bananas to lure monkeys into your kitchen, and then get them to help you bake! (make sure they use hair nets)
