Pan-Fried Potato Gnocchi with Wild Greens

Ingredients:
  • 2 cups potato gnocchi - homemade gnocchi or store bought
  • 2 tablespoons unsalted butter
  • 4 big handfuls wild greens or baby spinach
  • parmesan cheese
  • Sea salt - to taste
  • Pepper - to taste
  • Optional: 1/4 cup pine nuts
Directions:

Boil the gnocchi according to the original recipe, drain and cool (remember, once the gnocchi has reached the top of the water, this indicates they are ready)

In a large frying pan, melt the butter over medium high heat

Add the gnocchi in a single layer, and fry until crispy and brown on one side, carefully flip to brown the other side

Drain the majority of the butter off of the gnocchi on a paper towel

Add the baby spinach/wild greens and top with your sea salt and pepper

Toss until everything is well incorporated

Divide among 2 plates and garnish with the cheese and optional nuts
