Mango Salad


Sick of always having the same old boring green salad? Why not try something a little different? How about a simple mango salad? The con's of cutting the mango are eliminated from the sheer taste of this salad. From the sweetness of the mango and honey, to the pungent flavour of the red onion to the assertive flavour of the cilantro. All in all this is a great way to spruce up a nice chicken or fish meal, or just to have this as a main dish for lunch or dinner, or perhaps even breakfast if you don't mind throwing some red onion breath on your coworkers ;)

Ingredients:
  • 1 ripe mango
  • red onion as desired
  • cilantro as desired
  • cucumber
  • red pepper
Dressing:
  • tsp of honey (more or less depending on how sweet you want your salad to be)
  • cap full of rice wine vinegar (again more or less depending on how strong you would like it)
  • salt and pepper if desired
Topping:
  • If you have peanuts on hand, either throw on some whole peanuts or ground up peanuts
As you will see in the picture, some of the above ingredients are not shown, simply because I didn't have them on hand, and was craving this salad so much that I didn't want to go to the store and purchase the items. This salad, just as other salads are simply up to you. I do recommend, the red onion and cilantro even if you don't like these flavours, they really enhance the salad. The proportions however, really depend on your taste buds. Hope you'll try out this Vietnamese-style salad for yourself!
