The one thing I know I'm going to miss dearly while out there are my morning smoothies, and my banana soft serve's! It's been a couple of weeks now that I've been religiously making my smoothies/banana soft serves, and I know I'm going to miss them dearly while away. Because I know that I will have a big gap in my heart, and possibly some smoothie withdrawals, I planned to make sure that my last breakfasts' here incorporate them, no matter what. Unfortunately, I thought I was going to have to skip a day since I only had one banana left in the freezer, and truthfully I just can't do a smoothie without a banana anymore, it just doesn't give the milkshake consistency that I crave and desire. Thankfully at work, bananas were purchased and I quickly snagged one and put it in my purse so I can freeze it for my breakfast on Wednesday!
I think back to when I was younger and the berries in which I would eat in the summer, and how I would eat them. When I think of blueberries I don't really get a warm cozy feeling. Blueberries are not a fruit that I get cravings for, and at that I very rarely eat them because truthfully they just don't do anything for me. When I was younger, I remember eating blueberries before school or for snacks. And yes, that may sound healthy, but the way I ate them was a percetange of about 30% blueberries, 70% whipped cream. I mean, the whipped cream would literally hang over the edge of the bowl. I loved this, I would then take the can of whipped cream and add more to my mouth. Thankfully as I've gotten older, and more health-conscious this isn't something you'll see me do... on a regular basis. I've started incorporating blueberries into my diet occasionally as I know they are very good for you. So now, seeing as I'm trying to clean out my foods in the fridge and freezer before I go to Korea, as well as items that my mom has purchased that I can eat, comes a bag of frozen blueberries. My mom hasn't made smoothies in quite sometime, so those blueberries have just been sitting there. I decided I was going to make a blueberry pie sort of smoothie, and truthfully this smoothie is actually darn amazing, blueberries and all. I'm actually even looking forward to making this smoothie before I leave!
Blueberry Pie Smoothie
Ingredients:
- 1/2 cup fresh blueberries
- 1 large banana, frozen
- 1/2 cup milk
- 1/4 package silken tofu
- 2 1/2 tbsp oats
- 1 tsp cinnamon
The night before, add your blueberries, milk, oats, and cinnamon to a bowl (this helps make the smoothie very thick), and mix. In the morning, add your frozen banana, tofu and your mix to your blender and incorporate until you've reached your desired consistency. If it's too thick for you, thin it by adding more milk or water.
