WIAW - Round 1




Round 1 of WIAW.  I've been seeing What I ate Wednesday's for quite some time now, but have never actually posted one myself.  Here is a look at some of the food I eat during my day :) ...

Breakfast


Lately I've been going crazy over yoghurt parfaits.  They are light meals to start off the day (especially considering I eat breakfast at about 7:20 am, I don't want to start off the day feeling sluggish).  This one was a combination of strawberries + 1 kiwi + 1 banana with plain yoghurt mixed in with 1 heaping tbsp of raspberry jam + 1 tbsp of chia seeds topped with some granola and flaked coconut.  It was delicious, perfect, and a wonderful way to start the day.  I then had it with a delicious tea that I've been enjoying very much these past few days.



Mid-morning Snack

As you are going to see, I truly am a fruit-a-holic.  I've been told numerous times that I need to cut down on the amount of fruit I eat, since it is most likely the cause that I have high's and low's through out the day because of the sugar high's followed by crashes.  Nonetheless, I rather eat a million fruit in one day instead of pigging out on a bowl of unhealthiness such as chips, or ice cream, which I would eat if I didn't fill my "sweet" cravings with fruit.

Confession...

When I was suffering from my ED, as I posted in my confessional story the other day, one of the things that I truly enjoyed, and well became obsessed with were carbonated fruit waters.  They "filled" me and were super sweet and were zero calories, so I would drink these all the time.  My New Years Resolution however was to not drink these beverages anymore, or powdered juice drinks so that I'd replace those sweet cravings with actual food rather than zero calorie filled sweetened drinks.  However, the other day as I was passing by the water aisle my eye quickly jotted for the carbonated fruit waters, it had been six whole months since I'd even considered wanting one of these bad boys let alone consuming it.  At that moment though, I wanted it, and I snagged two bottles.  Yup, I fell into the carbonated fruit water junkie-phase again.  I believe within two weeks I had 9 bottles, (this time however, I've still been eating, I would just drink less water since I had this fake water).  I realized the other day how I was getting hooked on it, and really... that water didn't bring me happiness, it brought with it anxiety.  When I would put my mouth around the top, and slowly tilt my head back to guzzle in it's fruitiness it reminded me of how I felt when I would consume those drinks.  Attached to those drinks weren't happy memories as they once were when I consumed them (as my dad used to buy them for me when I was younger, so they reminded me of happiness which is why I first started drinking them in the first place), this time however, it was reminders of why I drank them.  If I drink this quickly, I'll get so full I won't have to eat.  I don't want those reminders, those memories, those bad feelings in my head, so I decided no more.  So, I've been adding freshly squeezed lemon to my water and drinking tea's to negate that juice-desire, and so far it's working!

Lunch

Oh yum.  Seriously, I've become addicted to the flavours of sweet potatoes with chickpeas as well as sweet potatoes with tofu.  This week I wanted to change it up a bit since I've been making the same easy go-to meal for the past few weeks now.  Usually I don't repeat my meals, but I think the fact that I don't desire making new foods 24/7 is a good thing, and one that I shouldn't feel upset or discouraged about but one that makes me feel happy because of how far I've come.  This week I decided to use a bit of inspiration from my meals, as well as this meal that my mom makes in the summer with sausage + yellow potatoes + peppers + onion + rosemary, so here is what I did.

Sweet Potato Zucchini and Chickpea Salad

 

Ingredients:
  • 1 medium sweet potato
  • 1 can of chickpeas, rinsed and drained
  • 1 yellow onion, chopped coarsely
  • Couple handfuls of spinach
  • 1 zucchini, quartered
  • Big handful of fresh rosemary
  • EVOO
  • Sea salt and pepper - to taste
  • Garlic - to taste
 Directions:
Preheat over to 425
Toss your sweet potato, chickpeas, and onion together with your EVOO (until evenly coated) and sprinkle with sea salt and pepper.
Cook for 30 minutes.
Take the pan out at the 15 minute mark just to toss your veggies.
After 30 minutes add your rosemary, spinach and zucchini, cook for another 15 minutes, or until well cooked.
Enjoy

I love this meal, it's so simple to make, you don't need any tools other than a knife and a cutting board, and while it's cooking you can go do other things, such as biking (stationery bike of course, you don't want to leave the house with your oven unattended, eeek).

I did it again, but this time since I took quite a few pictures of the food I ate I am going to post what I had.

Lunch Dessert

Few scoops of pistachio ice cream (pistachio is one of my all time favourite flavours in the entire world, so I had to dig in a little bit)

Afternoon Snack





1 peach
10 dates
Bowl of mixed fruit
Bowl of pineapple
...what did I say, I eat a lot of fruit 

Unfortunately that is all I photographed and since I am still at work I cannot predict what I am going to eat for dinner, let alone my evening munchies, but, this was my day up until about 5:00 pm.

oh man, I have fallen prey to calorie free bubbly beverages.. its a tough one to kick.. i cant stop on just clear water now (which i guess is better..) I am still eating though!

haha I know it just ISN'T the same... but, after a while it starts to hurt the teeth :( so I'm back to normal water again :)!

Your lunch looks delicious, and I'm loving all the fresh fruit :D I used to have that problem with using carbonated beverages to fill me up as well, and it's a tough one to break but I'm SO glad I did. It made my stomach absolutely miserable and bloated, and did nothing to give me the energy I needed to enjoy my day. Glad you're managing to kick the habit too :D

Fresh fruit is a MUST every day, and that lunch surely was fantastic, can never go wrong with chickpeas and sweet potatoes :P Yeah it definitely is tough, I went six months of not even thinking about it, but then seeing it the other day I wanted one, thankfully I know I can go without them so now it's been about a week and it will continue going that way :D
