- 1 ripe mango, peeled and cubed
- Goat cheese, to taste, crumbled on top
- Couple handful of desired greens
- 1/2 cup cooked shrimp
- EVOO to taste
Place your desired greens in a salad bowl, crumble goat cheese, cut your mango into cubes, and lightly saute your shrimp in a frying pan with EVOO, sea salt and pepper until cooked. Add your ingredients to the salad bowl. Sprinkle with desired dressing, or simply keep it clean with no dressing.
This is an extremely simple and refreshing salad.
