I have been a fan of sweet potato fries ever since my boyfriend's mom made them a few years ago. I fell in-love with their sweet taste and since then I've been hooked. These sweet potatoes were absolutely AMAZING. If there is one recipe that I can match to go with sweet potatoes it's this one here. I couldn't stop eating these, and wished I had made a bigger batch because they were insanely addicting. I'm going to try these ingredients on sweet potato chips and see if they receive the same addicting qualities that these bad boys did.
Ingredients:
- 3-4 medium sweet potatoes
- 2 tbs olive oil
- 1 tablespoon fine sugar
- 1 tsp chili powder
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Preheat oven to 450 degrees. Cut 3-4 medium sweet potatoes into wedges, and arrange on a baking sheet.
In a small bowl, combine 2 tablespoons olive oil, 1 tablespoon fine sugar, 1 teaspoon chili powder, 1 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Whisk with a fork, and drizzle over sweet potato wedges.
Toss to combine, and until potatoes are completely covered in the chili sauce.
Bake in preheated over for 15- 20 minutes, until tender when pierced with a fork. Remove from oven, and let cool
Eggs Baked in Whole Tomatoes
Recipe taken from here
Ingredients:
- 2 tomatoes
- 2 eggs
- Sea salt and pepper
- 2 tbsp Panko bread crumbs
- 4 mushrooms
- 2 little broccoli heads
- Cheese
Directions:
Preheat oven to 325 degrees F.
Cut a lid off the top of each tomato and scoop out the core and seeds. Break one egg over each tomato, sprinkle with salt and pepper, place the mushrooms and broccoli in the egg mix, cover with a thin layer of bread crumbs, and sprinkle cheese on top. Bake for 30 minutes. After about 1/2 an hour, your egg-whites should have turned opaque and solidified, and the yolk should still be runny. Place the tomatoes under the broiler for about 1 minute.
Serve with your sweet potato chili fries and it will be an amazing combination, also you can make the eggs with your favourite omelet ingredients or just keep it simple with an egg, but really anything can go.
Lemon Ginger Carrot Soup

Eh... this was not the greatest soup. Well, it just wasn't great at all. It didn't sit well with me, and don't recommend it. But I mean, my one friend liked it, maybe it just wasn't my thing, who knows.
