Chocolate Chip Vanilla Pudding Cookies

As you all know I have been on the hunt for the perfect sugar cookie and chocolate chip cookie recipe lately. I'm not sure where this sudden urge to find the best chocolate chip cookie is coming from but boy I want to find it. The best chocolate chip cookie recipe I had found up to date is this recipe. That recipe delivers a chewy yet soft cookie, with just the perfect amount of sweetness from the mix of butterscotch and chocolate chips, with a perfect crunch from the chopped walnuts. Usually I'm not a butterscotch or even a walnut person, but in this recipe, it is just perfect. I have made this recipe countless times, and each time they have done nothing but put smiles of satisfaction on the recipient's face. With the mix of white sugar and brown sugar it creates a gentle toffee-nut like taste. I really do love this cookie. When I need a chocolate chip cookie I always turn to this recipe.

This week I have made it my goal to try a few different chocolate chip recipes. The first one began with a recipe that I had found a couple of months ago but had just never gotten around to making them. I'm not sure why I never made them, I just always find other recipes that seem to touch me in a way that a chocolate chip cookie couldn't do, that is until I got this crazy craving. The thing I like most about a chocolate chip cookie isn't even the chocolate, it's the texture and the flavour that it gives off. Really, if I had a chocolate chip cookie without the chocolate chips I think it would be perfect, especially the recipe I am about to show you.

I have had a pack of vanilla pudding sitting around my house since I made the nanaimo bars a couple of months ago. I had bought vanilla pudding since I couldn't find the custard to put in the mix, this worked out beautifully. However, I really am not a pudding person, unless it's pistachio, I just find the texture to be like baby food, the fact that I could close my mouth and keep my teeth shut and just suck in a little bit and still get the food into my mouth creeps me out. Regardless, when I had laid eyes upon this recipe months back I knew I was going to make it, because I knew eventually I would be in the mood for chocolate chip cookies and it would also use up my vanilla pudding. Really I should of made these puppies when I first saw this recipe. Jordan always asks' me to make chocolate chip cookies for him, he likes your traditional cookie because he's a milk dunker, I am not, but lucky him I finally got around to making some.

I brought these cookies into work yesterday. The whole batch, and I have never seen a cookie disappear that quickly before. I seriously had people sitting around the tin and PASSING the tin to other people. "Who made these?" "They're sooooo good". Eventually people found out it was me who had brought them in, remember we have actors and people who aren't always in the office coming in so they don't know who the little baker is, and I was getting knocks on my window with gigantic smiles, some thumbs ups, and just all around happiness. Some people seriously had eaten more than five cookies. By the time they were gone, which I said was less than thirty minutes, I overheard a few people saying, "Wow I wish there were more of these". It really brought a smile to my face, and re-stated the feeling in my heart of just how much I love baking, and why I love it so much. It's the smiles on people's faces when they taste something so beautiful.


I almost didn't want to post this recipe because I seriously want to have it all to myself, but clearly I didn't create the recipe and it is not mine to withold. However, when I'm a mom this is going to be our family's secret recipe that I can pass on to my children, and their children and so on. We don't have any family recipe's, (well... that's not true, vut not a chocolate chip recipe), and I think it's important to have a traditional cookie family secret.

This was an amazing cookie. The pudding seriously sealed the deal. This cookie was chewy, with a beautiful soft-raw middle, with the perfect amount of crunch on the outside and just right right percent of chocolate to cookie ratio. This is a MUST-MAKE cookie that you CANNOT put to the side for months and months like I did. This will quickly become a family favourite and would certainly be great around the holidays especially with a nice hot mug of tea around the fireplace. Please do yourself this one favour and make it, make the full batch, freeze some for later, but make it all because you will regret it if you don't!

Ingredients:
  • 1/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 4 oz pkg vanilla pudding
  • 1 cup butter at room temperature
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/4 cup flour
  • 1 tsp soda
  • 1 12oz pkg chocolate chips
Directions:

In a large bowl combine the butter, sugars, vanilla, and pudding. Beat until smooth. Beat in eggs then gradually add flour and soda.

Beat it up well and stir in chips.

Bake at 375 degrees for 8 minutes.

Triple Chocolate Chocolate Pudding Cookies

Since the above cookies were such a huge hit I decided I was going to make another batch with the same basis but change it up a bit. I have had a box of chocolate pudding sitting in my cupboard for who knows how long, since the beginning of time is my guess. I knew I would never eat this as a pudding, and the other box we had of chocolate pudding I made into a cake, so I thought I would make these into a cookie. For me not being a fan of chocolate pudding, holy baby these cookies were AMAZING, and I am, let me repeat again AM NOT a fan of triple chocolate cookies AT ALL. I really despise triple chocolate cookies, if I had to starve for a day or eat triple chocolate cookies I rather starve, (however, I know one day definitely is not long to "starve" for). These cookies were just so tasty. Seriously the pudding is the most amazing addition to these cookies. It makes it so soft, chewy and tender. I want to make these cookies again using a banana pudding, and using coconut extract as well as coconut flakes alongside the chocolate chips and see how that turns out, because personally, I think it would be brilliant. If it could make a triple chocolate cookie taste like a god-like cookie I can't imagine what the above ingredients would make the cookie turn into!

I used the same recipe/directions as above just changed the ingredients around a bit, so I will post my ingredients and you can just scroll up for the directions :)

Ingredients:
  • 1/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 4 oz pkg chocolate pudding
  • 1 cup butter at room temperature
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/4 cup flour
  • 1 tsp soda
  • 1/2 cup mini white chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup semi-sweet chocolate chips
Get ready to get messy!
